Chocolate Caramel Brownies

I don't normally rate recipes low since I often "tweak" them so much, but I followed this one completely and it was a waste! My brownies turned out very greasy with an "undercooked-like" texture, even though I did not use a glass pan and I cooked them exactly as long as the recipe called for. The taste couldn't even save the texture, as it wasn't anything to write home about either! Thank goodness I had the sense to do a trial run batch before taking them to my in-laws' house for Thanksgiving as I'd planned! I will not be making these again.

Mini Meatloaves

These were pretty good ... I did use a large muffin pan like others had, since I didn't have a mini loaf pan. My loaves turned out pretty greasy, but maybe it was just the hamburger I used? I let the oats soak and only put cheese in half of the meat mixture. I do think that next time I will use Ritz crackers instead of oats, as I make a lot of cookies using oats, and the taste/texture reminded me of the cookies.

Linda's Lasagna

Very easy and delicious! I didn't have some of the spices needed, and I used ricotta cheese instead of cottage cheese. My husband loved it, but I felt like it would have been much better if I'd used the cottage cheese and proper spices. Next time I will definitely stick to the recipe and use cottage cheese!! The ricotta lacked in taste ...

Cheesy Broccoli Soup

In all, this is a very easy and tasty recipe. I did add some shredded chedder cheese, and used about 3/4 the called for processed cheese (Velveeta). I had to add a lot more liquid to it because once it cooled a little, it turned more into a gloppy broccoli/cheese side dish instead of a soup. Very tasty with the added liquid though.

Four Cheese Macaroni

This wasn't bad ... I wouldn't call it "creamy" though. I even doubled the cheese and it still came out in a dry, solid, block ... will keep looking for a creamier mac and cheese recipe ...

No Bake Peanut Butter Pie

This was a HUGE hit at the baby shower I took it to. I covered the top of my pie in lots of crumbled peanut butter cups. Everyone thought it was some kind of peanut butter cup icecream and one woman demanded the recipe!

Pumpkin Bread IV

I made this a lot during the Holidays! My family loved it! The only thing I recall doing different is using apple sauce in place of oil and I added extra spice. Delish!!

Baked Potato Skins

These were tasty but I think my own spin on them is what threw them off a little. I softened the potatoes in the microwave as suggested to save on time. I also used the "real bacon" bits which worked just fine. I was making mine as an appetizer with a mexican-style meal, so I added some chili powder before adding the cheese and bacon. I also provided sour cream and salsa for dipping. Just be sure that after you add the cheese and bacon, only put them in the oven long enough to melt the cheese!! I got busy and left them in there longer and the cheese came out kind of crunchy. Also, this recipe makes A LOT of the wedges, so be sure you have a party to feed or you'll have way too many leftovers like I did! In all, a great recipe to build from!

The Best Seafood Stuffed Mushrooms

I get asked to make these as well as pass on the recipe all the time! They are a favorite at home and in the work place. My husband and I love garlic, so I add extra to my "shrooms". I also add an extra can of crab, lemon pepper, and omit the breadcrumbs. YUM!

Delicious Artichoke Dip

My husband loved this dip. I added a little extra mayo/sour cream as well as cheese (we like cheesy!). Instead of parmesan cheese I used an Italian blend. I also added garlic and chopped up some fresh spinach and threw that in. Great with chips and crackers!

Brown Sugar Smokies

This recipe is simple and delicious! I made these for the first time for Thanksgiving with my family. My fiance, (who initially argued that lil smokies were only good when simmered in BBQ sauce in the crockpot,) loved these SO MUCH that he ate about 1/3 of them before we even left the house to go to my mother's! The only thing that I changed was that I put the little smokies in a zip lock bag along with the brown sugar before wrapping in bacon. I shook them up in the bag until all of the smokies were covered, then once wrapped in bacon, I used the rest of the brown sugar to coat the tops of the smokies after placing them on a baking sheet. Don't be afraid to get crazy with the brown sugar. It makes the smokies juicy and sweet!
