Cream Cheese Alfredo Sauce

I have been making this recipe for years (given to me by a friend). I use Chicken or Shrimp instead of the mushrooms, or make it plain. However, I DO NOT use the butter at all. It does not need it and is still SO GOOD. That really cuts down the fat content and almost makes it a healthy recipe!

Quick and Easy Alfredo Sauce

If you want to easily lighten this recipe, just cut out the butter. I have been making it this way for years. It does not need the butter at all!

Sour Cream Turkey Enchiladas

I have a very similar recipe that I make all the time. It is slightly easier with similar results. When making the sauce, cook together 1 cup Chicken Broth and about a 1/2 cup of salsa (hot or mild, whatever you like). Once it's hot, add a rounded tablespoon of cornstarch, blended into a few tablespoons of cold water. Bring to a boil and cook about 2 minutes stirring constantly. Reduces the amount of cutting and chopping and saves a few minutes.

Real Potato Leek Soup

Just made this soup. Was really good but I found the broth a little thin. I added about a 1/2 cup of Idoahoan premium potato flakes. It thickened the broth just enough. Now it is delicious.

Sugarless Banana Walnut Cake

I was looking for something I could make to use the very ripe bananas on my counter that my 14 year old diabetic son could eat. After reading this recipe and the reviews, I decided to try adding some splenda to the recipe. It was still not nearly sweet enough. We then sprinkled the top with a generous spoonful of his splenda/cinnamon blend (that he makes for his toast) and added a tablespoon of Cool Whip (Cool Whip is surprisingly low in sugar). That was exactly what it needed! All the kids ended up eating it. (I put regular cinnamon sugar on for the non-diabetic children.) I would recommend eating it warm.
