Sloppy Joe Sandwiches

We don't really eat meat in our house so I subbed the ground beef for faux ground "meat" & I (nor the boyfriend) could taste the difference. Tasty stuff! Next time I'm going to try using lentils in place of the "meat". Thanks for a fabulously easy i'm too lazy to cook meal!

Chocolate Candy Bar Cake

I was incredibly reluctant to make this cake. Almost everything about it goes against all of my kitchen rules from the boxed mix to the frozen whipped topping, but I was very short on time & needed a birthday cake FAST. I used Butterfinger bars & crushed up some additional ones to put up the sides of the cake. It looked pro bakery quality. I was nervous to hear peoples reactions because I loathe box mixes but everyone loved it. I even have to admit the cake was incredibly moist & whatever box taste was there got covered up by the delicious frosting (: I only had 8" pans & it worked marvelously. Thanks for a fantastic recipe!

Monkey Bread I

My Monkey Bread came out so pretty that I was going to post a picture... but I never got a chance. I made it for a BBQ we had. It was GONE that night. I had inverted it, ran to get my camera and in the 1 minute I was away... HALF THE BREAD WAS GONE! Next time I'll make it for my nieces. They'll LOVE that you can eat it with your hands. Thanks for the sinful recipe ;]

Blueberry Buckle

My roomies ate THE WHOLE THING in one day. I made it for breakfast in the morning and when I came home from work that evening... it was GONE! Make sure to use good blueberries, I felt that made all the difference. I get mine at my local farmers market. I don't think I'd ever use frozen blueberries... the taste just wouldn't be the same.

Potato Skillet

Pretty delicious. I gave this 4 stars because I had to add quite a few more spices for flavor. I doubled the recipe and found that the 1/4 tsp of salt & pepper did hardly anything for the skillet. I also omitted the bacon (didn't have any on hand and I'm a vegetarian). I used rosemary olive oil to fry up the potatoes instead of the bacon grease. It made my house smell great! I served it with english muffins. It was an overall very yummy and satisfying dish. Will make again!

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

YUMMY! This dish was fabulous. My tummy thanks you while my love handles don't. I did use low fat earth balance vegan butter and low fat cream cheese to TRY and cut the fat content a bit... Although I did use about 6 1/2 ounces of cream cheese instead of 3 so I'm not sure what good my attempt at calorie cutting did... but still absolutely FANTASTIC. Next time I'll use whole wheat linguine and try non fat cream cheese. Thanks! :]

Grandmother's Buttermilk Cornbread

I really don't take the time to rate things very often on this site unless I think they are phenomenal. This morning I decided to make my boyfriend breakfast and thought cornbread would really complete the meal. This knocked his socks off. He LOVED it. Ate almost the whole thing. I did make a few changes though. I used low fat earth balance vegan "butter" instead of regular butter, whole wheat flower instead of white and 1 cup of whole milk (minus 2 tablespoons),replaced with 2 tablespoons of lemon juice instead of the buttermilk because I didn't have any on hand. It came out great! At the end I poured a bit of melted earth balance over the top. Will definitely make again! Thanks :]

Spaghetti Squash I

Delicious! My boyfriend loved it. The only thing that I would add would be some red pepper flakes for a little kick. Also. I baked my squash for 45 minutes instead of the recommended 30. Thanks for a great recipe!

Addictive Sweet Potato Burritos

My boyfriend wanted to make these for dinner for us one night and I was pretty skeptical. The ingredients didn't really seem like they would go together that well... I was pretty surprised once I had some. They were AMAZING! They are truly addictive. Thanks for the great recipe :]

Award Winning Soft Chocolate Chip Cookies

Fantastic! I nanny for a 7 and 9 year old and find myself making these cookies for almost every event (soccer games, bake sales, birthday parties, etc). The kids LOVE them as do the adults. Thank you so much for this great recipe! :] P.S. As the other reviews stated, it is easier to handle the dough if you refrigerate it for a bit.
