Quinoa and Black Beans
**update** i've just made this again for the third or fourth time and still can't say enough about it. each time i've played with it in a couple of different ways and it turns out so good every time. this time i actually burned some of the quinoa (oops) and added a full can of diced tomatoes and i still couldn't stop eating it. granted, it looked more like goulash or something but soooo good! original review: fantastic...and super easy! this was my first time cooking with quinoa and i am hooked! i added some chicken that i cooked in a tomato/chicken broth mixture and then diced up. sooo good!

Chicken Tikka Masala
this was an excellent masala. the hubs and i have been trying to find a decent curry recipe since trying it for the first time last year. this one suits both our tastes well (i prefer a masala and he a vindaloo). but be aware: as is, this recipe is hot. so if you want to tune it down a little, leave out the jalapeno or the cayenne. we also cut the salt down quite a bit. also, we added zucchini and squash for a little texture. very good recipe! :)

Zesty Slow Cooker Chicken Barbecue
i've made this recipe twice now and just love it. both times i've used a jack daniel's sauce (original and hickory brown sugar this time) and it turned out great both times. shredding the chicken a few hours into the cooking process definitely helps it to absorb the sauce. very easy and yummy recipe!
