Hearty Breakfast Muffins
I really, really enjoyed these healthy muffins, so did my almost 2 year old daughter and my husband. They were delicious and moist. We are striving to reduce processed foods and this was a perfect addition to our meal plans. I almost exactly followed the recipe. I substituted coconut oil for the vegetable oil (1/2 cup for 1/2 cup) and didn't add the pecans because I didn't have any on hand and I wasn't sure if my daughter would eat them anyway. My yogurt was Greek yogurt. My only regret is not doubling this batch. I felt great about letting my daughter eat these for dinner because of all the veggies and fruit. These muffins barely rise, so fill your muffin tins completely.

Iced Pumpkin Cookies
I really enjoyed these cookies. I substituted 1/2 cup of brown sugar for 1/2 of the white sugar as another reviewer suggested. I mixed the glaze in a very small bowl, so I could simply dip the top of the cookies in. I found that 15 minutes was a perfect time to bake the cookies. Thanks for a great recipe!

Slow Cooker Chicken Mole
I thought this recipe was great. I only used 3/4 tsp of chile powder in response to one of the comments. I added 1/8 tsp of nutmeg, 1 tsp sugar and 1/4 tsp salt. I also only used yellow raisins and did not add currants. I put everything for the sauce in my food processor to make it more of a liquid. The sauce had a great flavor, and my guests loved it. The chicken turned out a little dry, but it was good after I shred it and mixed it with the sauce. I had plenty of sauce for the amount of chicken.
