Make sure you find a good sauce and let it simmer with the meat and onions a little longer. Also, proper baking dish is key...after layering I could barely fit the lid on my baking dish.

Angel Chicken Pasta

Great easy recipe! I threw everything in my slow cooker for a little over 4 hours on low and it was awesome. I used chicken stock instead of white wine and also added some pepper flakes for a little kick. Toward the end, I added some fresh mushrooms. In the future I would add more fresh veggies, then double the sause. I just squicked by this time with the sauce...

Chicken Enchiladas II

These were pretty good even though I was worried about the richness of the cheese sause. I thought that it would be too overpowering. The only thing I might rethink next time is cooking the chicken/spices/onion/garlic/peppers together alone. Then drizzle the cheese sauce in the tortillas on the chicken mix. This way I can control the sodium/chicken/cheese ratio better. You can't tast the other flavors that well if there is too much sauce. I was in a hurry and used a store bought roasted chicken, but they still took a while to assemble. Pair these with some good home made salsa since I still wanted some sort of tomato flavor.

It does need something to make it creamy....it is amazing though. In the future I I would either add a little processed cheese or use the original pasta ratio.

Chicken Pot Pie IX

Fantastic! I added mushrooms and peas to it as well as a little bit of hot sauce for kick. Also, to make it a little thicker, I used buttermilk and it made them really creamy.

Szechwan Shrimp

Really good flavor, but go easy on the ginger if you are not used to it. Very easy meal and make sure to use non frozen shrimp...you can totally taste the difference.

Insanely Amazing Jalapeno Cheese Dip

Really good recipe! We did add one real jalapeno instead of the canned version. My only issue was that I thought it would turn out more like queso, but instead it was like spinach dip without the spinach. White cheddar might be something I will try next time as well.

Easy Pizza Sauce III

Fried Egg Sandwich

So easy! I tried out the microwave way and cooked an egg for about a minute. Remember to put something over the egg or else you will be cleaning your microwave like me! I like to add a little bit of garlic to the egg and add low fat mayo to the bun. I love how fast it is!

Grandma's Green Bean Casserole

This recipe turned out really good for our Thanksgiving dinner. I left out the fried onions because the family was not a fan of them and it still turned out great. The only thing that I would change would be to use less salt. I think the cheese I used added more salt than I planned. Good recipe!

Slow Cooker Buffalo Chicken Sandwiches

Awesome recipe! I add a little bit of chicken broth with the frozen chicken and then let it cook for about 2-3 hours. Then I shred it and add the Franks Hot Sauce and let it all cook for another hour or so. It actually tastes better reheated the second day!

Best Ever Jalapeno Poppers

Super good! I added 2x the bacon and also added some canned jalapenos diced so that it was spicy. Also added a pinch of cayenne pepper to the cheese mix. We loved them...although I wish they were quicker to make...took a super long time and I was bored by the end of it all. Add real bacon and not bacon bits otherwise you will not really taste it.

Lime Chicken Soft Tacos

Wow! Really, really amazing! I used 1 lb of chicken breast and doubled the marinade all but the red wine vinegar. I also added about 1/2 tsp of cummin and cayanne pepper. Cook the chicken for about 8 minutes and then add the marinade as well as some red and green peppers and a 1/2 cup of onions. Used a little bit of corn starch to thicken the sauce too. Fantastic recipe!---- I tried marinating the chicken for a few hours and then cooking and adding more marinade...not a fan. The chicken was dry and over cooked and it just did not have the same fresh taste as the original recipe.

Salmon Fillets with Creamy Dill

I liked it and super easy for making my first Salmon ever. The only thing that I would change was adding a thinner layer of dill/mayo sauce. I just thought the fish to mayo ratio was a little off even though I made the recipe exactly. I did use FF mayo and thought it tasted fine.

Black Bean and Couscous Salad

Well I thought all the ingredients sounded amazing...but upon making it, I thought that it came out really bland. I thought that the ratio of couscous to beans and corn was way off. Needed less couscous and their was only a hint of the vinaigrette and I would have liked more. My husband also asked me if I would be offended if he didn't finish it. :(

Grilled Corn on the Cob

Honestly, all I did was soak the corn in cold water for about 4 hours, then wrap them in foil with the shiny side inside. Then grilled for 30 min. Perfect! I just did not want to season/butter them before because everyone had different preferences.

Peanut Butter Noodles

Pretty good recipe, and totally easy. I used egg noodles because that was what I had and they worked out fine. I think I added a little too much peanut butter so I think I will reduce or just watch my portions better next time! Added frozen stir fry veggies too.
