Adapted from Beaker's Vegetable Barley Soup

Excellent soup. I made this totally vegetarian by using vegetarian Worcestershire sauce, no anchovies. I will probably omit the sugar next time as I don't think it needs it. Used about 1 clove of chopped garlic and omitted the garlic powder. Used tomatoes that had garlic in the juice too. Omitted the black pepper when cooking as I read a previous review that mentioned something about the pepper, added it to taste at the table. Omitted the parsely since I didn't have it on hand. Simmer it for about 30-45 minutes until the veggies were tender but not mushy. I'll be making this again.

Salsa De Tomatillo

I used between 10-12 tomatillos when I made this, it was the amount we got from the farmer. I toned it down a bit by only using one jalapeno and it still had a kick to it, IMO. We eat it with tortilla chips as a snack. It's a wonderful and easy recipe.

Slow Cooker Stuffing

I have made this stuffing 3 years in a row with excellent results. I make this veggie friendly by changing the chicken broth to veggie stock, I use a high quality store bought brand. I adjust the amount of stock I use as I cook this dish. I usually add enough to moisten everything and then check it and add more as needed. Every year I have used a different amount of liquid. I buy bread from the bakery and cut it up, usually a wheat and white bread. I leave the cubes out over night to get stale, I put the cut up bread on cookie sheets and leave them in a turned off oven. I cut back on the salt to about 1 tsp. adding more if needed. I cut back on the butter to about 1/2 cup and I omit the mushrooms since not everyone likes them. To save even more time, I buy pre cut bags of onion and celery at the store.

Luscious Spinach Artichoke Dip

Very easy to make. Was a big hit at the party I brought it to. I did not alter the recipe at all but I am going to work on making it again with lower fat content ingredients.

All-Day Apple Butter

Reduced the sugar to two cups and it was still sweet, might be able to reduce it a bit more. We cooked it overnight and then on low covered for an extra couple hours. Cooked it about 2 hours at the end uncovered and it turned a wonderful rich caramel color and smelled wonderful. We used a hand blender to smooth out the chunks and it turned out to be the perfect consistency and color. Used whatever firm apples we had on hand. We canned and froze the batch, we had about 7 half pint jars from it. We will make this again.

Baked Fresh Cherry Pie

Very tasty. I added an extra cup of cherries since I used a deep dish pie plate, it was from Pampered Chef and stoneware. I let the pie set up overnight and it turned out perfectly. When I first removed it from the over it appeared very liquid so I covered it with foil and let it sit. I will be making this again. I bought my cherry pitter from Pampered Chef also and it worked great and made fairly short work of pitting the fresh cherries. I'm adding to this review as I have made this pie a second time. I used fresh cherries. I had sour cherries and golden so I used both in the pie, with the majority being sour cherries. I find that baking this pie late at night when it is cooler and I don't mind heating up the kitchen works very well as I like to let it set up overnight, this seems to be the key for me and getting this pie to turn out nicely. The only alteration I make to this recipe is to add more cherries to my pie to fill up my deep dish pie plate. For pitting the cherries I use a large bowl and put my hands in the bowl and aim the pitter at the bottom to contain the cherry juice.

Classic Waffles

I used a little less salt and real vanilla extract. I thought these were great, light on the inside and crispy on the outside. We got less waffles than indicated but we may have a larger waffle maker. We will make these again.

Irish Potato Casserole

This was very good, I had my doubts when I started making it but it was a big hit. It's a bit labor intensive if you have to grate the potatoes by hand but well worth the effort. I belive I used low fat milk and cheese and it was still very tasty.

Easy Spinach Lasagna with White Sauce

I liked the recipe, it was very easy and tasty, however, I think a 10x15 pan is too large, as I easily fit 4 noodles instead of 3 across. I will make this again using a 9 x 13 instead. I changed the following: Omitted the carrots (personal perference), added some garlic and various Italian spices to the filling. I also used jarred alfredo along with homemade alfredo sauce, I got the homemade alfredo sauce recipe from this site.

Seven Layer Tortilla Pie

We liked this at my house. Mine came out to be 5 layers instead of 7 layers but I had bigger than 8" tortillas on hand. I agree that it was a little bland and next time I make this I'll use a spicer salsa and maybe use the recipe for black bean and corn salad II, also on this site, as the filling. BF added some hot sauce to it when he ate it and thought it was great.

Spinach Mushroom Quiche

Took longer to cook than the 30 minutes in the recipe, I took the suggestion of another reviewer and added artichoke hearts. It was a hit in my house with requests for more. I will be making this again.
