Slow Cooker Split Pea Sausage Soup

Slight changes: in a large pot, sauteed sausage and veggies in olive oil, then added rest of ingredients (using 8 cups of water). Simmered for 2.5 hrs, soup was thick and hearty. Perfect for a cold day!

Easy Broccoli Quiche

My changes: 3/4 cup egg beaters, 3/4 cup milk and added 1 teaspoon chicken bouillion for flavor. Layered all cheese on bottom of pie crust, then added cooked veggies and topped with egg mixture. Big hit at a babyshower.

Slow Cooker Pulled Pork

So easy! used 4 lbs boneless pork sirloin roast and a 2L bottle of generic root beer and Sweet Baby Rays BBQ sauce. Was very tender and delicious! My new go to recipe to feed a crowd. Only added BBQ sauce to 1/3 of the pork and ate that right away. Will use the rest of the very tender and flavorful pork in tacos or other recipes.

Chocolaty Peanut Butter Haystacks

Real Strawberry Cupcakes

Easy to make! Didn't use the vanilla pudding and they came out tasty, moist and a bit dense. Topped them with cool whip and fresh strawberries to bring out the strawberry taste. Might use a whole cup of strawberry puree next time.

Olive Oil Roasted Eggplant with Lemon

Cut the eggplant into 1 inch rounds and salted it on both sides for 30 minutes. Delicious, healthy and will definitely make it again!
