Pumpkin Gingerbread

9/15/2014 - Made this today with some changes as recommended by others. Baked at 325 instead of 350. I decreased sugar to 1 3/4 cups using half dark brown and half white. I replaced half of the oil with cinnamon applesauce and used olive oil for the other half. I also increased spices by about half and added some freshly grated nutmeg. Cooled to handle and wrapped while still slightly warm. Beautifully moist and intensely spiced and absolutely delicious. Thanks for recipe and suggestions for changes.

Squasage (Sausage-stuffed Squash)

10/19/2013 - I made this last night for dinner and as written. Liked it as is. Think I will make again swapping ricotta for sour cream and adding parsley and garlic and maybe some basil. More like a lasagna filling.

Authentic Chinese Egg Rolls (from a Chinese person)

I have been making my own egg rolls for years but this recipe got so many great reviews I decided to try it. I did use pork - ground some shoulder and browned it. I only used 1/2 pound and increased veggies using straw mushrooms, bean sprouts, coleslaw mix (cheated. Loved the egg in the mix and did add some sesame oil. Will make again and add some garlic and ginger. Delicious.

Refried Beans Without the Refry

These are terrific. I added no salt until after cooked and then only 1 1/2 tsp. I added extra garlic and will add even more next time and also a little more cumin. Loved how easy and creamy and delicious these turned out. I too will never buy canned refried beans again. Thanks so much for sharing this.

Turkey Thighs in Brown Sauce

Made this for the second time on Christmas day. After searing meat and browning veg I finished in crockpot. I did add some roasted garlic to veg plus a little thyme for the mushrooms and used homedmade turkey stock in place of chicken - what I had. Just as great second time. Have some sauce left and think will use as base for turkey salisbury steak - sounds good right.

Restaurant Style Egg Drop Soup

Made this today and liked it very much. Needs scallions for texture and crunch and could be a little thicker. Used homemade broth made with some star anise which added extra flavor. Very good, quick and low calorie.

Heavenly Meatloaf with Blue Cheese, Mushrooms, and Spinach

Made this tonight. Some changes of course. I halved this recipe and used 12 oz. of ground turkey. However, I kept the vegetable quantities the same as original so needed just a bit of extra bread crumb ( I used panko.) Loved the texture and flavor. Will definitely make again. Also, served with homemade ratatouille made with all fresh farmers market veg. Yum.

Southern Fried Chicken Gizzards

Like other reviewers I adjusted seasonings to my taste. Very good. I still like them best the way I grew up with them - my Mom always cooked these in her pasta sauce until they were really really tender. She also used turkey gizzard and heart as part of her dressing recipe.

Red Wine Sesame Biscuits

Loved these! I am a big fan of sesame so had to try these. Want to thank the other reviewers for the tips. I too excluded egg white - not needed. I used way more sesame seeds than 2 T. though - probably 4-4 1/2 total. These remind me of some of my one grandmothers savory cookies from my childhood. Fabulous. Thanks for sharing this one.

Pork Tenderloin Stew

Made this today for tonight. Stew always better after it sits. I thought I had all ingredients at hand and I had all but sour cream and didn't have any of usual substitutions so used some neufachtel in lieu of sour cream. Also added some thyme (mushrooms need it for me). I did simmer my meat separately for about an hour just to make it extra tender than added my veg. Really great flavors. Thanks for a different twist on stew.

Potato Scones

I just made these the other day with some leftover mash I needed to use. Someone else said these were dense, I found that mine came out very light. Will make again and perhaps add cheese and or herbs and spices. Very nice recipe.

Russian Mushroom and Potato Soup

This is a wonderfully flavorful soup. The only addition I made was adding a head of roasted garlic to the onion and carrots during the saute. Otherwise adhered to the recipe. Amazing flavors.

Brussels Sprouts and Barley Soup

Just made this and it is terrific. I did add about 6 cloves of garlic with the first batch of veg. At the end I stirred in about a tsp or so of smoked paprika, a squirt of fresh lemon juice and some parsley. Excellent soup.
