The Best Cheeseball

Oh gracious! This was AAAAAAMAZING!!!!! I thought I followed this to a T but when I looked at it today, I totally forgot to add the Worcestershire sauce. Oops! However, it was FANTASTIC without it. I'll try it next time with it. This will be a new staple for all our get togethers. :)

White Bean Chicken Chili

FANTASTIC!!! This is the first time I've ever had or made white bean chili and I was amazed! We used 1 can of corn instead of fresh corn and had to use green enchilada sauce instead of tomatillos (or salsa verde) as our store didn't have either (living on a military base overseas so our options are limited). Per other reviews, I also added about 2T cornstarch to thicken it up. It had a bite to it (and I'm a wuss) so I sprinkled cheese and added about 2 tsp sour cream and it was perfect! This will definitely be one we keep and make over and over again!!!

Chicken and Cheese Crescents

As written, I would give this a 3. First time I made it, it was a disaster. The crescent rolls weren't done and the sauce was starting to burn the sides of the dish. With modifications, I give it a 5, hands down. Here's what I do for 2 people: dice up 3-4 potatoes and make mashed potatoes slice a boneless, skinless chicken breast and cook (about 1" square pieces) until done add chicken and cheese to each crescent roll (usually 3 pieces of chicken per roll and cover with shredded colby/monterey jack cheese) Bake rolls at 350 for 11-13 mins Add 1-1/4 cup milk, 1/2 cup cheese (same kind as above), 1 can of cream of chicken soup and any remaining chicken (to be used as sauce) and heat until warm (add cheese after soup/milk mix is warm and whisk until melted) Keep whisking as the cheese will stick to the bottom of the pan Serve! I place crescent rolls and cover with mashed potatoes (or place potatoes in middle and surround with rolls) and cover with the soupy mixture. I make this about once a week as it is my hubby's favorite recipe. When I tell him that's what we're having for dinner, he ALWAYS leaves work early. :) Thank you so much for the idea!

Lemon and Cilantro Shrimp

I have not made this with the lemon zest as I don't use fresh lemons that often and don't want to waste them... That being said, the lemon in this recipe is very overpowering. Maybe the lemon zest cuts that down a bit, I don't know. I also don't use as much cilantro as that has also been overpowering. The first time I made it, my hubby and I didn't care for it but we ate it. Since then, I've cut the cilantro back to just sprinkling it and adding 1/2 the lemon juice called for. I remove the shrimp from the pan and add the sauce left in the pan to the pasta for some flavor. I still make this on occasion...

Linguine with Chicken and Sauteed Vegetables

I really enjoyed this recipe. Very flexible and giving. I tend to use a little less pasta so I can enjoy more veggies but that's a personal taste. I also use low-sodium soy sauce so it's not so salty. As written, very good!

Easy Breaded Shrimp

Made these for a friend because he didn't like the coconut ones I was making (freak! LOL). These turned out very well!!! I have made with and without a deep fryer and in case you want your arms splattered with hot oil, use a deep fryer. (I had a blonde moment while doing it, hence the burned arms. lol) I served these with regular ol cocktail sauce and some Pina colada sauce I had for the coconut shrimp. Great!

Coconut Shrimp I

Really, really good! Followed to a T and turned out wonderful! I have made with and without a deep fryer. In case you want your arms splattered with hot oil, use a deep fryer. (I had a blonde moment while doing it, hence the burned arms. lol) I also found a Pina colada dip on another site that I made to go with it. Very, very yummy! ;)

Shrimp and Asparagus

WONDERFUL!!! I made some minor changes, based on other reviews and personal taste. First, I didn't use the whole spears because the ends are always hard. So... I cut them in half, threw the bottom away and cut the top 1/2 into bite size pieces. I sautéed the asparagus for 5 mins in 2T extra virgin olive oil, 1 T butter and 1/2 tsp minced garlic. I added mushrooms and sautéed an additional min. Last, added shrimp (flash frozen type, thawed) and 3/4 tsp lemon juice. Once shrimp were warm (about 2 mins), I added to the cooked pasta. Again, WONDERFUL!!! Hubby and I really enjoyed the flavor of everything together and will be making again!

Baked Honey Mustard Chicken

Excellent! Very easy to prepare and bake. Wonderful flavor! Followed the prep to a T. The only thing I did different was to cover with foil for the first 25 mins of baking. After turning and covering with remaining sauce, I left uncovered and baked for an additional 15 mins. Thank you so much for the delicious recipe!

Tangy Shrimp and Scallops

This was fantastic! I made the sauce just like the recipe says but I didn't have time to marinade it. I also didn't use scallops because I didn't have any on hand. I basted the shrimp prior to putting on the grill, let them sit for 5 mins, put them on the grill and basted each side after flipping once. They turned out WONDERFUL!!! We didn't even make it to the dinner table without eating a few on the way. :)

Spicy Lime Grilled Shrimp

I'm not a "spicy" kind of person so I wasn't a huge fan, but they were good. It seemed that some were more spicy than others, even though they were all in the same bag. I didn't have any cajun spices so I used Old Bay, like other reviewers said. I've only had O.B. once before so I'm not sure how much that differs from Cajun but they were good (the ones that weren't too spicy, that is). Overall good though and I will try this one again. Thanks!

These were ok. I was hoping for something more but I don't know what. Be sure to grease your pan well because they will stick if you miss a spot. Overall, just ok. Will probably make again sometime as the hubby liked them.

Chocolate Cherry Cupcakes

These were unbelievable! After reading the other reviews, I only put one cherry in the middle and added extra pie filling. I also used cream cheese frosting and placed a cherry on top. The only “complaint” was after a day or two, they started to "sweat" and the frosting started to melt. (It’s my own fault for not eating them all at the same time but either way, I have no idea how to fix that.) I may try to use maraschino cherries to top next time and see if that helps. Overall though, these were fantastic and my hubby already wants me to make more. :)
