Enchiladas

I have used a similar recipe for a few years now, the only real difference is that I don't do anything to the tortillas before I fill them and place them in the pan to bake. I continue to do it this way, and I love the results! Just made this last night and I got surprised compliments from someone who doesn't really like Mexican food. This is a good recipe for picky eaters, as it is simple, not too spicy, and you can still get your fill on some yummy Mexican style food! Also, i add some of the enchilada sauce with the beef/onion mixture before filling the tortillas, I think it gives it a bit more taste, and it keeps them nice and saucy inside. Serve them with sour cream. yum!

Brooke's Best Bombshell Brownies

I was looking for a recipe with ingredients that I already had laying around. These turned out perfectly! I halved the recipe, as there are only two of us, and made it in an 8x8 pan. They baked in about 30 minutes, and I forgot to mix the chips in, so i sprinkled them on top and it turned out just fine that way. I also read previous reviews and used half white sugar, half brown sugar. I had also never made homemade brownies before, but I will always use this recipe now, they turned out so good! Easy and quick to make, I'd recommend to anyone looking for a brownie recipe.

Deep Fried Cookies

I had been wondering how to make these ever since I had them at a restaurant in Aruba while on vacation. I added a bit of vanilla extract to the batter to sweeten it up a bit, fried them in the oil just long enough to get a light brown color, and took them right out. They turned out great, just like I had tried them before. I'd try them next time with a chocolate sauce.

Buttery Cooked Carrots

This was simple and added just the right taste to the carrots. I will definitely use this recipe again. Reading the previous reviews, I left hardly any water in the pan, and let the carrots sit on low heat while the rest of the meal finished cooking, so that they could absorb more of the flavor.

Chinese Chicken Fried Rice II

Didn't have as much taste as I would have expected for Chicken Fried Rice. The recipe turned out just fine, but I think I'll look for another to try next time I'm in the mood for Chinese.

Chewy Peanut Butter Chocolate Chip Cookies

These cookies turned out great! I have to say that the peanut butter taste wasn't too apparent in the cookie, it was just barely there, but they still tasted great. They were nice and chewy, even days after they were made. I reduced the size of the cookies and used a cookie dough scoop instead, I think they would have been way too big otherwise. I will use this recipe again when I need a simple and easy chocolate chip cookie!

Artichoke & Spinach Dip Restaurant Style

This was a simple recipe to follow, and the end result tasted great! Not exactly like what I've had in restaurants, but it still tasted great. I had always gotten spinach & artichoke dip at restaurants, but never thought to make it myself. Also, about 10 minutes before I took it out of the oven, I sprinkled a handful of mozzarella cheese on top to melt, it turned out great! Served it with tortilla chips. I would also suggest mixing the ingredients around very well before baking, as I found a few pockets of cheese once it was done baking, which wasn't a big deal and could be remedied by stirring it up again once it was out of the oven.
