Homemade Pancake Mix

These were great. I have made 2 batches of the mix, and both times it turned out great. We usually do the blueberry pancakes, and instead of mixing them into the batter, we let the boys (3 1/2) make faces with the blueberries. Great recipe!

Pineapple Sweet Potato Souffle

Well, I made this as my "new" dish for thanksgiving this year, and while I enjoyed the flavor of the dish, the texture wasn't what I was expecting. I whipped the potato mixture for 11 minutes and it never became "fluffy". I used canned yams, which is supposed to be an acceptable substitution, but it wasn't. It was basically a puree. Because this wasn't fluffy, and it had the eggs in it, the texture a bit gross. I really enjoyed the pineapple topping, but I would reduce the sugar by a third next time. I think I will try this one more time with fresh sweet potatoes and see if the texture is better, if not, I will just make my praline yams and top with the reduced sugar pineapple mixture. Thanks for sharing.

Soft Garlic Breadsticks

Coconut Macaroons III

I made these to send to my husband, but my Mother and sister came over before they were boxed up, so the first batch didn't make it. They were soooo good, and very easy to make. My grandmother kept asking my mom where I learned to bake, and she replied "allrecipes.com"

This was really great. After reading all of the reviews, I used a bit less liquid, and I regret it. I will follow the recipe next time and the only sub I will make is apple juice for the water.

Quick Chicken with Asparagus and Provolone

This was so delicious, and very easy. I used fresh asparagus, but kept everything else as is. The bread crumbs and quality of olive oil count here. I have used several brands of bread crumbs and have found the Kroger store brand to be the best. it has the perfect spice blend, and isn't too salty. The only change I might make next time is to poach the asparagus separately in the broth, as the bottom "crust" on the chicken gets really soggy after it is cooked in the liquid.

Peanut Butter Sandwich Cookies

I didn't like these cookies at all. They were very dry, even fresh from the oven. They weren't even quite brown around the edges yet. However, the filling was very nice, with only 2 1/4 cups of confectioners sugar after you let it set for an hour or so, covered with plastic wrap. Next time, I will stick with the recipe on the back of the Jif Jar and top with a dollop of the "filling"

Pretty good, it was a little sweet, so I will decrease the sugar by 1/4 cup next time as well as the soy sauce to 2 tbs.

Cream Cheese Won Tons

Not horrible, but not good. The water chestnuts gave it a really strange texture. These should be crunchy/chewy on the outside and creamy on the inside. The flavor was also not there. I tried to save the second half by adding cut up shrimp to the cream cheese mixture, and it made it better. All in all to make this taste good, omit the chestnut, add some garlic and chopped shrimp.

This was okay. The ranch flavor was intense, however you couldn't taste the cheese at all. I would recommend just melting it on top of the burger.

Sunday Best Fruit Salad

This is really great. I love how versatile this recipe is. I used blueberries, strawberries, and green grapes. I think it would be wonderful with just peaches and blueberries though.

BBQ Tuna Fritters

I tripled the recipe and used a yellow onion and instant pre-packaged oatmeal because that is what I had on hand and it turned out great. My only problem was that the first batch burned on the bottom so I had to turn heat down to med/low.
