High Temperature Eye-of-Round Roast

We had a 3.8 lb Eye-of-Round Roast. After preheating the oven to 500 we turned it down to 475. We forgot the 20 minute mark so it roasted for 40 minutes before we turned off the oven. The roast was completely done, no pink. But perfect if you like a more well done roast. Next time we'll back off on the roasting time for the pink middle. This is the first time we had tried this type of cooking method so I was a skeptic. Ready to order pizza for our guests as a backup. No need for the backup, hardly any left overs either. We'll certainly be doing this one again and again.
