Brown Rice and Black Bean Casserole

I did ingredient search for zucchini and found this recipe. It sounded healthy and good. So I tried it. My husband liked it and I could taste it even though my taste buds are way off due to chemotherapy. The changes I made was I thinly sliced baby carrots instead of shredded. I thought I could taste them better and I did taste them a bit. I didn't have Swiss cheese so used chedder. And I only put a sprinkle of Cayenne because I can't eat spicy at this time.

Turkey Minestrone

I made this for a Bunco party of 12 and it was a hit. Lots of raves. I stayed pretty close to the recipe using fresh carrots, celery, mushrooms, spinach, Zucchini and frozen green beans for the vegetables. I had to simmer a bit longer to cook the carrots. So carrots went in first and then the others according to how long they needed to cook. I used Acini Di Pepe for the macaroni. Thank you for the great recipe!

Fresh Apple Spice Cake

This was very good. I put cream cheese icing on the cake. I did use less butter and added some of my homemade apple sauce. A good recipe to use up some apples off of my tree.

Cheese-Filled Ginger Bread

This is more like a cake then a bread to me, because of the sweetness of the cream cheese filling and glaze. The recipe is good, yet not a real moist cake. The filling is what makes it so tasty. I don't know if you could make the cake moist when there is a filling. It may need to be that consistency to keep filling in place. I think I would put more ginger in next time because I was looking for more of a ginger taste and it was very light in ginger taste.

Chocolate Zucchini Cake I

This cake was very good and moist. I put cream cheese frosting on it and took it to a barbacue. Everyone that had some said it was good, but there was a dark chocolate cake with chocolate frosting that got eaten faster. But this is a good way to use up the zucchini and it all got eaten by us when we got home.

Dark and Moist Zucchini Cake

This recipe reminded me of when I was dieting and was making food that had low or no fat in it. Even if it wasn't that good you ate it anyway because it was low in fat and it was sweet. The bread was heavy and rubbery looking. The taste was bland. I think if you added some salt(maybe about 1/2 tsp.) and more oil and maybe less applesauce you may have a better tasteing bread.

Raspberry Pie I

I liked this recipe because the pie was not runny at all. I made a raspberry pie the week before with flour instead of the cornstarch and tapioca and it was very runny which make the crust soggy. This one was very good with the berries staying in the pie and the crust stayed crisp.
