Carrot Cake III

I use this recipe over and over again and everyone loves it. The only difference is that i spread the chopped pecans on top of half the cake batter coz i like crunchy pecans. The other half has no nuts at all coz my kids don;t like nuts with their cake :) Fail-proof recipe for sure. Oh. i should mention that i use half the baking soda only coz i dont like the after-taste of baking soda.

Mincemeat Quick Bread

I decided to give this recipe a try at midnight when i was feeling inspired to bake. This recipe seemed fuss-free and based on the reviews, worth trying out. That is where the 5 stars came in. Anyway, i added the juice of one whole orange, and some previously made candied orange peel, chopped dried homegrown figs, and some chopped candied cherries for color. When i mixed the batter, i felt it could use some more liquid so i added a few splashes of southern Comfort, and 2 tbsps of molasses for color. I also added a pinch each of nutmeg, allspice and ground ginger. I don't know if it makes any difference, but the brand of mincemeat i used was Crosse&Blackwell. I used a ring pan and baked it for 50mins. Came out fantastic. Love the flavors, and texture. Dense but not too much, moist enough without being sticky, and i think it would go doubly great with brandy butter if i wasnt trying to keep the calories low. haha. Thanks for sharing this recipe!

Jemput Jumput (Banana Fritters)

Depending on how ripe or over ripe the bananas are, adjust the amount of flour used, to obtain a very very thick batter. It helps to use 2 spoons to drop neat spoonfuls of batter into the hot oil. Traditionally, sharp pointy 'tails' on the fritters are not favored. For variation, i sometimes add a couple of tablespoons of shredded/ dessicated coconut into the batter.

Cream Puff Shells

I made small puffs about 2" max, so i reduced the baking time by 5mins. Recipe works great, the last time i made choux pastry was 2 decades ago and failed miserably. This time i am so happy it worked. Thanks! Came out perfect!

Orange Chicken

Thanks for sharing this excellent recipe. I tried it out tonight and for sure i will be making it again in the near future. I had only Pregresso Italian style breadcrumbs, so i used that instead of the stuffing mix. Since i had some time to kill, i seasoned the chicken with some s&p, and grated orange. It sure gave it depth. I also made some honey mustard dip (also from allrecipes, to accompany the chicken. )

Raspberry and Almond Shortbread Thumbprints

Perfectly simple recipe without any problems at all. I decided to add some grated meyer lemon rind to the butter/sugar mixture which gave it a little more depth of flavor. Everyone loved it when i made it last week so i had to make some more today in time for xmas.

Caramel Apple Cake

I read the reviews and added an egg, plus added 15mins to the baking time as I used a ring pan. Turned out great. Oh, i used freshly squeezed orange juice in place of water just coz i wanted to use up some oranges.

Chocolate Sheet Cake III

Excellent recipe. I made one small cake for my daughter's friend's bday today, and the rest of the batter was made into cupcakes which turned out great. I half filled the cupcake liners, baked for 12mins, they rose beautifully.

Instead of discarding the marinade, pour it into a little pot and cook to reduce until slightly syrupy, then serve a little over rice. Note: If it is too salty for your liking, add a little more sugar to balance the flavor.

Mom's Best Meatloaf

Definitely the best i've had too. My last attempt was more like a brick, using another recipe. This one is moist and flavorful. The only things i added are a dash of mixed herbs & 1 envelope onion soup mix coz i just love onions.

Keftedes - Greek Meatballs

I love this recipe, but i don't add any potato to it. Instead of frying, i bake them in the oven for 30mins at 350F, if they were cold to start with.

Honey Baked Chicken II

Excellent flavors but of course, being asian, i am used to slightly heavier spices so i added a dash of cayenne pepper and paprika. Will definitely cook this dish again.

Curry Pumpkin Soup

After reading the recipe, and the reviews, i decided to saute finely chopped onion and finely grated fresh ginger with the butter, before adding the rest of the ingredients. I used House Curry cubes instead of curry powder. And lastly drizzled some coconut cream before serving. I didn't add any soy sauce. I'm asian, and soy sauce is not something we add to curry, that's why i omitted it. Got lots of compliments on the soup. :) tks for the recipe!

The Best Banana Bread

Excellent recipe.I've been making banana bread for years now and it's since i no longer hv all my fave recipes with me, finding one that has great texture, the right sweetness, and simplicity, is a wonderful thing. I made 50% more, split the batter into one loaf pan and one muffin pan. I baked the muffins for 25mins, topped with a pecan each. That way i can give them to my neighbor, without having to make slices from the loaf.

Sugar Glazed Salmon

Delicious! I used the broiler though and loved watching the sugar turning dark. That was the best part of it all :) I used chopped fresh basil instead of dry.

Coffee Praline Muffins

After reading the reviews, i decided to double the recipe, add a bit more sugar, and changed the topping to a crumble mix. Instead of adding pecans into the batter, i added them with the crumble topping. Turned out 24 great lil muffins!
