Creamy Hollandaise Sauce

Made Eggs Benedict for my mom this Mother's Day morning! It was my first time ever making hollandaise AND poached eggs, and everything worked wonderful. ONLY MAKE SURE TO CUT DOWN THE LEMON IN THIS RECIPE! I cut the amount in half, and that was good. Also, I don't think it needs quite so much butter - next time I might try using half the amount of butter.

Chinese Almond Cookies

These were delicious! I was assigned to make 130 cookies for a community dinner, and I chose these. I made a small batch first and decided to double the almond extract in the next ones. I also used slivered almonds on top. When they were done they were buttery, crisp and very good!

Whole Grain Waffles

These were so delicious it's not funny! And with all those good things in them it's hard to pass up. The recipe is also so open to changes, you can substitute or add anything you like and they will still be perfect. This is definitely a must-try recipe!

Easy Morning Glory Muffins

These are very good! Moist and yummy. Here are the changes I made: I used half white and half whole wheat, you couldn't even tell I did, I had no apples and I used no subsitute for them, and I used wheat germ instead of coconut. Next time I might try pureeing the apple and carrots, because I personally don't like the small bits that you find when you bite in. All in all quite good - I will be making them again! (I can definitely see adding pumpkin somehow...)

Glazed Lemon Bundt Cake

Very delicious cake, I definitely liked it. Only change I made was to use half whole wheat flour, which worked perfectly. I do agree that the lemon flavor is very soft; next time I will try a lot of real lemon juice and see how that works. The glaze made it overall just a little too sweet for me, I might halve the ammount used next time. But, very good! I made it for mother's day and everyone liked it.

Sam's Famous Carrot Cake

I made this for my grandpa's birthday and everyone loved it so much. My mom wants me to make it for her birthday now. My changes: I replaced half the oil with applesauce, left out the coconut and raisons (personal preference), and baked the batter in two circular pans. Baking time was reduced to 35 minutes, so remember to cook it for less time if you use circular pans to make a two layer cake. Next time I might try using half whole wheat flour and replace more of the oil with applesauce. YUMMY!

Roasted Winter Squash Seeds

Absolutely delicious! Mine just got out of the oven and they're sooo good. Really awesome. I've tried recipes with other spices before, but this plain and simple way of doing it is much better.

Gnocchi with Sage-Butter Sauce

I made this sauce for my homemade gnocchi. My dad said they were "incredible!" and "SO good!". Of course anything taste good with 1/4 cup of butter on it!

Lemon Square Bars

I have to say these are the absolute best lemon bars I've ever had!!! I LOVED them. The only thing I did differently was cut the butter in cold for the crust (as suggested by another reviewer) and it turned out great. Not sure what the difference is so I'm going to try it with the melted butter as well. As I said, these were extremely delicious, but I do love lemon so next time I will add a bit more lemon juice!

Baked Asparagus with Balsamic Butter Sauce

This is so so SO delicious! Like others I switched the amounts of the soy sauce and vinegar, which worked well. Everyone ate theirs before anything else and told me to go out and buy some more asparagus to make more!

Spinach Lasagna III

Everyone liked it, but decided the recipe needed a few changes. Next time I will triple the spinach - 2 cups is hardly anything when cooked down. I will make a little more filling and sauce as well, because the layers ended up being a bit thin. Also, I will grease the pan and sauce the bottom. (The bottom layer stuck to the pan when I made it.) I made fresh pasta for this and didn't cook it before using it. It worked great. I'll try adding in some different things next time, too, like olives and broccoli and maybe some seitan.

Spinach Brownies

4 stars because it's DELICIOUS after you change a few things! First, only 1/4 butter is needed. (You don't miss the rest - it might possibly even work with less.) Second, use part of the butter to saute the onions, and add some garlic! I didn't use mozzarella; instead I used 6 oz Mexican cheese mix and 2 oz sharp cheddar, some of which I sprinkled on top. After all that they turned out REALLY good; everyone loved them!
