Apple Oatmeal Crisp

I made it almost as written and it was delicious, but it turned out dry. I'm thinking this may be dependent on the apple variety. I used heirloom apples from my brother's property; I think they may be an old macintosh type but I'm not sure. Still, it was very yummy! The only minor modification I made was to cut down on white sugar because we like things a little less sweet.

Eggplant Tomato Bake

Delicious. My husband loved it. I've never had eggplant before but grew some this year in my garden, and this was divine! I did modify it quite a bit. Made my own sauce using tomatoes and peppers from my garden along with mushrooms, onions, zucchini and olive oil. I also used ghee for frying. I omitted water, and put it in the pan very simply with layer of spaghetti sauce, eggplants on top, tomatoes, and a bit of mozzarella on each one. It actually does look very much like the photo.

Hot Sausage Dip

Awesome! EASY to make. I've been looking for this recipe for a long time - my aunt used to make it years ago. Made it for a small party at our house, it was delicious as usual and my boyfriend especially loved it. Thanks for the recipe!

Pumpkin Cheesecake

As almost everyone does, I modified this a bit. I used gingersnap cookies for the crust and I added some cinnamon and brown sugar to the sour cream topping for more flavor, color and sweetness. The only reason I didn't give this recipe a "5" is because the crust was too greasy and I like a cheesecake crust to be more substantial, and come up the sides of the pan. I would add about 50% more crumbs to improve the butter ratio. Also, because I liked the ginger snap taste, next time I would garnish with some cookie crumbs and/or add ginger to the sour cream as well. The texture and flavor of the filling was excellent though - not too sweet, and light and airy, for a cheesecake. If you like your cheescakes more dense though - go for a recipe with more cheese.

Peanut Butter Chocolate Chip Cookies

HEAVENLY! The taste of these cookies is wonderful. What makes them top-notch is the texture, though. Crunchy bits of peanuts and oatmeal gives them body. I made it almost as written, except I added a bit extra PB and used milk-chocolate chips since I like them better and that's what I had.

Sausage and Egg Casserole

Like a previous reviewer, I had a crowd to feed so I added two eggs and increased the milk to 2 1/4 cups. It says you have to let it sit overnight, but I was only able to let it sit for 20 minutes or so, and it came out great, took about an hour to bake. I also sauteed 1/2 onion and sliced red peppers with the sausage, so it was colorful and tasty. Used wheat bread since I try to avoid white. I got a ton of compliments on this one - all men, and they said it was delicious. The pan disappeared within minutes.

Mom's Meat Loaf

I love this recipe. I make it pretty much as written except I double it or sometimes quadruple it for 1 or 2.5 pounds of burger. Some reviewers described the mix as too mushy -- but I find the meatloaf moist when it's done. I do like the glaze a little bolder so I add worcestershire sauce, some white vinegar and a little yellow mustard. Great recipe - this is BETTER than my mom's meat loaf.

Rich Chocolate Cheesecake

This cheesecake was my first, I made it as a 'birthday' cake for my sweetheart, and it was absolutely delicious. The flavors are complex without being too sweet. The coffee makes the chocolate rich and is not overpowering, and the sour cream on top gives a lightness to the taste. Excellent recipe, I'll definitely make this one again. I used chocolate Teddy Grahams for the crust.
