I'm a full time working mother of two boys and a husband. My oldest son is a sophomore at Texas A&M, so is only home on occasion. I'm a teacher so my schedule is a little better than most, but I'm still constantly searching for quick, delicious, healthy recipes to cook for my family. My husband and I have been married for 24 years and have two lovely sons aged 19 & 14 (soon to be 20 & 15). We are all foodies. Food makes us happy. My boys and husband have been known to break out into a "happy dance" when tasting something delicious. It's a joy cooking for a family that appreciates and enjoys food as much as mine.
My favorite things to cook
I have recently discovered cast iron cooking and am immensely enjoying cooking in my Le Creuset cast iron pots. We love carnitas, brisket, braised pork, soups and stews.
My favorite family cooking traditions
We like soups, stews, and braised meats during the cooler months, and enjoy cooking on the BBQ during our hot summer months. Mexican, Italian, and Irish recipes are a staple in our cooking repertoire.

Green Chile and Rice Casserole
This dish is always a hit! I've made it as written and have also made it using a variety of flavors of rice, such as Spanish rice or Taco rice (Knorr) to accompany Mexican food. I typically make it using 2 packages of rice, about 1-1.5 cups of sour cream, two 4-oz cans of green chiles and 2 cups of cheese (definitely not an exact measurement). I reserve about 3/4 cup of cheese for the top, mix all ingredients together, top it with cheese and bake it until hot & bubbly. It's been delicious every time and receives rave reviews every time!

Chef John's Perfect Prime Rib
We have used this recipe several times and our prime ribs have turned out perfectly! Notice the cook's note at the end of the recipe to figure out the exact cooking time for your size of prime rib. We have cooked several different sizes of prime rib using Chef John's method of calculating the cooking times, and each were cooked to perfection. Thank you for such an easy, perfect recipe!

The Best Chicken Fried Steak
My husband and son LOVED this recipe. The Tabasco & garlic in the batter really gives it a great flavor. The only thing I did differently was I sprinkled a bit of Creole/Cajun seasoning on the cube steak before I dredged it in the flout/batter/flour mixture. I also drained most of the oil out of the cast iron pan and added about a tablespoon of bacon grease to make the gravy. DELICIOUS. Served with homemade mashed potatoes, and you have a heavenly comfort food meal.
