Baked French Toast

I loved this!! I made a mistake and added the brown sugar to the egg mixture (didn't read the directions first). BUT it turned out fantastic!!! I didn't make any sauce- just ate it like that, was hot and crispy. I won't make it any different from now on...

Double Tomato Bruschetta

I forgot the cheese, so I just left it off. I think it would be better without it. I made it as an appetizer for guests, and everyone raved about it. I snacked on it for a couple days afterward. Thank you so much for this great recipe!

Beef Tenderloin With Roasted Shallots

Wow, this was fantastic. I also pureed the shallots. No wonder reviewers were making this for a special occasion, this meet is pretty expensive... but well worth it. I made sandwiches the following days with the leftovers.

To Die For Blueberry Muffins

These are fantastic! I used some suggestions from other members: I used buttermilk instead of regular milk, brown sugar in topping instead of white sugar, cut the topping in half and still had plenty left over. Next time I will add more butter to the topping. Overall I am very please with this recipe.

Lemon Poppy Seed Muffins II

I thought the muffins were pretty good. I used a whole cup of lemon yogurt and 1/3 cup oil. They were plenty moist but I thought it lacked a good lemon flavor, and I even used 2 tablespoons of lemon zest. Next time I will use more extract and more sugar b/c I thought they weren't sweet enough for my taste. I usually don't like a glaze topping, but it really makes these muffins. I will definitely try these again in order to perfect the recipe to my liking.

Dijon Crusted Halibut

This is the first meal I cooked for the boyfriend- he was very impressed! I used some of the suggestions made by other members (including old bay and panko bread crumbs) - really worked!

Creamed Spinach II

I don't usually like spinach, but I gave it a try. I also added 1/2 an onion, 2 garlic cloves, 1/4 cup mile and some parmesan cheese. I decided to use leftovers with pasta. So I cooked rotini pasta, added the creamed spinach, added 1/3 a can of cream of mushroom and a little more milk and cheese. That made a great meal!

Broiled Scallops
