Famous Pork Chops

This is one of our favorite recipes! Here's what I do: Only use 1 egg; use Ritz cracker crumbs; season with Garlic Salt, coarse black Pepper & dash of Cayenne pepper. Dot tops with 1/3 stick of butter pats. Bake (uncovered) at 400 for 15-20 minutes. Turn chops over & top with pats from remaining 1/3 stick of butter. Bake 15 more minutes. Perfect! Crispy outside, tender & moist inside!

Rempel Family Meatloaf

Made this for weeknight family dinner. It has a very dense, meaty texture (which I'm not sure was a good thing); however, we found this meatloaf to be seriously lacking in flavor. Even my 'carnivore' husband said he likes my old standby meatloaf recipe better. Think I'll go back to using my old meatloaf recipe -- it's more moist and has more flavor. The leftovers of mine re-heat much better (especially for next-day meatloaf sandwiches! Yum!) as it is more moist. Also, I missed the tiny bits of green pepper/onion/tomato that I enjoy in my recipe. (BUT . . . I might use the "glaze" from other reader's Tips on this recipe, on my own! So something gained at least!)

Cheesy Ham and Hash Brown Casserole

made this last night to go with burgers on the grill; turned out pretty good. Was definitely creamy (almost too soupy when it first came out of the oven, but set up a little bit after about 10min). Mine was greasy on top, though! Ugh! I laid a couple of strong, absorbent paper towels across the top to blot up most of the grease & it looked a lot more appetizing after that. *Final conclusion: although this recipe was good, I think I like my old hashbrown casserole better (only 1 can of "Cream of ..." soup) and I might add diced ham to mine in the future. ** Oh yeah, I think it needs several shakes of Hot Sauce to give it a little zing!

Baked Penne with Italian Sausage

made this last night (exactly per recipe). Hubby's only comments were, 'needs more meat, less pasta.' I thought it needed a little more kick, too. OK, I'll probably try this again and will use 2 lbs. mild/sweet Italian sausage (or 1 lb. Italian sausage & 3/4 lb. ground beef); add 1 tsp. minced garlic; 1/2 tsp. red pepper flakes; 1/2 tsp. dried oregano. And only 8-10 oz. pasta. I like the flavor of the Italian sausage, instead of plain ground beef, and I like the mozzarella cheese all on top instead of mozz/cheddar all thoughout. Thanks for the recipe. Think this will make a nice occassional Italian dish in my rotation.

Chicken and Stuffing Casserole

this just needs something else! Bland! (I left out the Cream of celery & half the milk -- it just seemed way too runny!) and added 1/2 cup of (re-hydrated) dried cranberries, 1/2 cup chopped pecans and some orange zest, sage & poultry seasoning. I realize I totally changed this recipe, but because the first time I made this, it was boring!

Easy White Chili

This is a good White Chicken Chili. (I only had 4 cans of Northern beans and 1 can of Chopped Green Chilies on hand & that seemed like enough!) and I added some Old Bay & celery seed. But this is a good recipe!!

Really good! Don't change a thing . . . but unless your fish filets are really thin, you'll need a little longer than 8-10 minutes baking time! (I used salt & vinegar potato chips -- Yum!)

Easy Lemony-Dilly Cucumber Salad

Either my lemon had an excessive amount of juice, or this is just too lemony! I also added sliced cherry tomatoes and onion slices, per the photo shown with this recipe. (The second time I made this I added a small handful of feta cheese and that really helped balance-out the lemon flavor!)

Roasted Garlic Cauliflower

I LOVE this!! (could eat the whole head all by myself!) I cook this at only 400 (covered with foil part of the time) as I don't like my cauliflower to get blackened. Roasted Cauliflower is AWESOME!!

Broiled Tilapia Parmesan

Very good. Can vary the spices to suit your tastes. Definitely needs more salt (& I rarely salt things -- but fish, in general, needs a good bit of salt to give it flavor) -- I used 1/2 t. garlic salt. Also, I bake at 375 for 15-18 minutes, rather than broil (as I don't like the spattering, sizzling in my oven!)

Cherry Crunch

Delicious!! I made exactly as recipe the first time & it was great! The second time I added 3/4 tsp baking powder & a 1/4 tsp of salt to the crumb mixture. And added a teaspoon of vanilla extract to the cherry. (Oh! and baked the crumb 'crust' for 10 minutes before topping with cherries, to keep it from getting soggy) Even better!! (I'm dying to try this with apple or blueberry pie filling -- or even PEACH!!) Yum!

Garlicky Summer Squash and Fresh Corn

This is good, but I agree with others -- it really needs a little more kick! The second time I made it, I subbed garlic salt for regular salt, and added basil & oregano & a dash of cayenne pepper! That pepped it up!! (I used frozen corn, instead of fresh and it was just as good!)

Fresh Broccoli Salad

We REALLY like this!!! After making this 3-4 times, I now substitute dried cranberries for the raisins (like the tartness of the cranberries & the red color) and I add 6-8 oz. shredded mozzarella or Pepper Jack cheese -- seems to really add something! But this recipe is wonderful as is or with variations. Thanks!

Jimmy Dean Breakfast Casserole

without including the 'optional' mushrooms, tomatoes, & green onions, this is a pretty standard breakfast casserole (although with 10eggs & 3cups of milk & 6cups torn bread, it will BARELY fit in a 9x13x2 dish -- set your dish on a cookie sheet in case it 'runs over' in your oven, as mine did!!)

Roasted Apples and Brussels Sprouts

I love brussel sprouts! This was good, but not much of an improvement over plain roasted brussel sprouts. (I didn't really care for the texture/taste of the apples with the brussel sprouts -- onions were OK with them, though). The second time I made this, I tried adding pecans (per another reviewer's suggestion) and liked that better!

Cherry Fluff

Delicious! (not very 'pretty' when it's first mixed up, but a pretty pink salad/dessert when it 'sets up' after being refrigerated for several hours.) Oh -- I added about a cup of mini marshmallows! (might add 1/2 cup of chopped pecans next time)

Slow Cooker Taco Soup

This is one of my favorite crock pot recipes! Of course, I make a few modifications to suit me, personally (like a can of black beans instead of kidney beans and a 15oz. can of tomato sauce, instead of 8oz. can & water; plus I add some cumin & chili powder) but the flavor is WONDERFUL no matter what you do to this recipe! EVERYONE that I've shared this with LOVES it!! Thanks Janeen Bar!
