This chili beats out my previous "go to " recipe. I've made it three times now. I changed a few little things the first time based on ingredients I had on hand ... Like instead of adding the bacon bits later, I chopped up the bacon into lardons and sautéed the onion and peppers together with the bacon then added to the meat, tomatoes, spices, etc. Also used chipoltle red cayenne red pepper which gave it a nice smokey hint. Prepared exactly as written, this is a mild and flavorful chili, which I prefer, but of course you can add the heat at the end.
