Boyfriend Bait Beef Stroganoff

This is delicious. It's worth trying to use the tenderloin, as the finished product is much classier than stroganoff made with ground beef. I was tempted to replace the shallots with onions, but I'm glad I didn't; shallots give this dish such a rich, distinct flavor. I felt confident serving this dish to guests.

Chili-Lime Chicken Kabobs

Very tasty and very easy. Good for a crowd, and the leftovers go really well on top of a green salad! I'll keep this on hand for the rest of the grilling season.

Seattle Macadamia Cookies

Great cakey, chewey texture. The macadamia nuts lend a good, salty crunch. I used a bit more espresso powder (1.5 Tablespoons) but that's because I really like the taste of espresso. I cooked them only about 10 minutes, which was perfect. I will make these again.

Chicken with Red Grapes And Mushrooms

Easy and enjoyable. I used fresh sage instead of dried thyme, and sauteed the sage with the mushrooms. Next time I might use more red wine (or perhaps port wine) to give the sauce a stronger flavor.

Baked Pesto Chicken

So easy, and so good. This will be a go-to recipe when I need something that's quick to put together. I did marinate the chicken in the pesto for a few hours, and it was really tender and flavorful.

Shrimp Marinara

I like the idea of simmering the sauce all day in the crock pot. The addition of red pepper flakes was good, too. A good recipe, and a good way to use ingredients that I had on hand. Nothing spectacular, though, and I probably won't make it again.

Grilled Portobello with Basil Mayonnaise Sandwich

Delicious! Very satisfying on a hot summer night. The only changes I made were 1) to marinade the mushrooms in the vinegar/oil/garlic for 2 hours instead of just brushing it on before grilling. The mushrooms were very flavorful that way, and 2) to add a slight amount of cheese (pick your favorite) onto the mushrooms just before taking off the grill. I loved the mayo, and will look for other ways to use it!

Creamy Mustard and Tarragon Chicken

I will make this again. I do think that pounding the chicken breasts flat and adding mushrooms would be good improvements, but, as-is, the recipe is a keeper. FYI, I made the same amount of sauce for half the amount of chicken, and I am glad I did.

Jerre's Black Bean and Pork Tenderloin Slow Cooker Chili

Fantastic, especially given how easy it is to put together. Threw it in the crock pot in 15 minutes, and had a delicious chili for dinner. I used pinto beans (only 2 cans), because that's what I had, and also, about 30 minutes before eating I added a can of diced green chilis. Gave it a little extra zing. A keeper, thanks!

Potato Arugula Salad

My husband usually avoids potato salad and can't stop talking about how good this one is! A fantastic alternative to a mayo-based potato salad. I live arugula and am always looking for new ways to use it. I made this just as the recipe said, and I would do it that way again. Nice and garlicky. I'd consider adding fresh herbs like mint or rosemary.

My Favorite Beet Salad

Delicious! I used baby kale instead of spinach and tossed some toasted pumpkin seeds on top for crunch. Will definitely make this again. Next time, though, I will cut the dressing amount in at least half...this made way too much.
