Cinnamon Raisin Bread I

Reviewed: Aug. 1, 2014
Changes: I halved the servings, which ends up calling for 1.5 eggs. I used 2. Bread flour instead of AP. 1/2 tsp cinn in dough. Brown sugar instead of white in filling. I made one long loaf and baked it on my bread stone, but it easily could have been two. Baked for 45 min, 20 min of that tented w/ foil to prevent burning. Very good. My dream bread would be denser (eggier?) or perhaps with some pastry flour. But this bread did rise up rally well, was easy to mix and knead and work with. Very good finished consistency, will hold up well for making French toast.

Janet's Rich Banana Bread

Reviewed: Jun. 30, 2013
I used light sour cream and added 1 tsp cinnamon. I made this in my mixer (I read another review that said this would make it less dense: mine was a spongy moist cake). I slice my ripe (but not brown inside) bananas as thin as I can, and enjoy the pieces in the bread/cake. I would like to make it with less sugar, as I find it too sweet. Maybe 3/4 - 1/2 cup instead of 1 cup, and a mix of brown and white sugar. Yogurt could easily sub for the sour cream.

New York Italian Pizza Dough

Reviewed: Dec. 2, 2011
So close to the dough of my dreams (from Boston, missing the pizza!). The first time I made this, I only left it in the fridge for an hour.. it stretched out wonderfully, flavor was good, and texture spot on! The second time, I left it in the fridge overnight and some of the next day.. flavor was really good, texture chewy and thin and bubbly.. but I couldn't get it to stretch out very well. Definitely going back for more tries.

1st time, made w/ froz blueberries and followed recipe to a T. Bland in taste, not a great presentation. Second time, subbed 1/2 c br sugar, added 2sp cinn, 2 tsp vanilla and ground black pepper. Baked in jumbo muffin tins (buttered, 3/4 full) and yummmmmy

Chocolate Raisin Oatmeal Muffins

Reviewed: Jan. 3, 2011
No problems with the consistency of batter, but overall taste was boringly bland. More... salt? spices? molasses? something. Won't make these again.

Best Bread Machine Bread

Reviewed: Jan. 1, 2011
I have been making this for years, and it's the method (proof yeast in water) I use for all breads in my bread machine. My machine makes a 2 or 2.5lb loaf. I adjust the servings from 12 to 16 for a 2bl loaf. Never fails. I made the original recipe (12 servings) on the 2lb loaf setting once and it wasn't good. Dense, didn't rise. I wonder if the people who are having trouble are using the wrong recipe size for their machine loaf size?

French Baguettes

Reviewed: Nov. 21, 2010
I made no changes to the recipe and used my bread machine. Flour was pretty easy to roll out. I put a baking sheet in the bottom of the oven and threw in a cup of water right before adding the bread, for steam. The bread was moist and tender and great, consistency-wise. The flavor was good, but kind of plain/bland.

Makhani Chicken (Indian Butter Chicken)

Reviewed: Jul. 13, 2008
This always turns out well - and the chicken melts like butter in your mouth. I never strain the yogurt, seems fine to me. I did try making this with tofu (followed chicken instrux to a T), but it was pretty boring. Won't repeat, even for a veg. crowd.

Una's Cheddar Beer Bread (bread machine dough cycle)

Reviewed: Jul. 12, 2008
Fantastic! I too used 3 cups of regular flour and baking powder/salt/sugar as suggested below. Perfect hearty bread, almost cakey. I had planned to make sandwiches with it, but the bread itself is so flavorful (depending on what you add) and dense that it really can stand alone. A bit of cream cheese on a basil loaf is yummy. Can't wait to try all sorts of sweet & savory ideas...
