Quinoa and Black Beans

This was my first time ever making quinoa so I was a bit leary plus my husband had had it in the past and hated the texture of it but I decided to try this recipe anyway and we both loved it! It's a great recipe for newbies to quinoa. I did have to cook mine a bit longer til it was transculent and did add a bit of water to get it there (could be because of my altititude) I also left out the cilantro cuz I didn't have any on hand and didn't feel like I was missing it and I only used 1 can of black beans and 3/4 c of corn. I think the full amounts would've been overkill. I also used extra virgin olive oil vs vegetable oil. Definitely will make this a regular side dish in my menus plus the health benefits of quinoa are an added bonus!

Slow Cooker Pot Roast

Great pot roast, I was skeptical about the blend of seasonings but they turned out to be a great flavor, I added about 2 cups of water and wish I didn't add so much once it was done cooking. I also just used a pork roast for it since that's all I had on hand and added extra veggies like potatoes, mushrooms and celery.

Grandma's Noodles II

These were the best noodles ever for chicken noodle soup. I like my noodles big so I cut them a little wide but then they almost tripled in size so they were huge, (I added the baking powder) but they were amazing. I was a little worried at 1st because I boiled them in a sauce pan with some of the broth from my chicken in the crockpot for about 10 min and they were a little tough and firmer than what I wanted, but after boiling them for 10 min I added them to my crock pot mixture and left it alone for about 20 min and they turned out perfect and soft. Amazing and way easier than I thought, I'll never make chicken noodle soup without homeade noodles again. Thanks!

Carrot Cake III

The carrot cake itself was excellent however the frosting wasn't what I was hoping for so when making it a second time I had to make up my own frosting recipe to get that traditional carrotcake taste, so only 4 stars from me due to that. I also cooked the cake in two 9 inch round pans for 35 min. and they turned out great. The first time I made the frosting I decided to double the recipe to ensure I'd have enough for a stacked cake and I got about 3 cups of sugar into the mix with 2 pkgs of cream cheese and decided that was more than enough. It was already over sweet and I can't imagine what it would've been like if I went with all 8 cups of sugar. It wouldn't have been the traditional carrotcake creamcheese icing flavor just an extra sweet sugar frosting. After making the cake a second time I found 2 packages of cream cheese and 2 cups of sugar and 1/8 cup of butter was my perfect frosting for a round stacked cake. It was fantastic that way!

Lime Chicken Soft Tacos

I've made this twice now in the crock pot, on low for 6 hrs. I prefer the crockpot to do my cooking for me while I'm at work, but both times there was something I didn't care for about it or something was missing. The second time I added a half of a can of drained petite diced tomatoes and cilantro and that added to the authentic flavor but then I realized that it was the chicken itself that I didn't like. I think cooking it in the crockpot made the chicken kind of mushy and over shredded and gave it a canned chicken texture that I didn't like at all. The texture I think would be good if I added some black beans, corn and rice to try a southwest flavor. The overall flavor was good but I think I'll be better off doing it on the stove like the recipe says just to keep the chicken a little firmer. However after the leftovers dried out a little overnight they did make good chicken quesadillas for lunch.

Bacon Wrapped Smokies

These are the best appetizers ever! The first time I made them, I don't think I added enough sugar, you could tell they would've been better with a little more. The second time I added to much sugar and not all the sugar melted and it turned into a kinda crunchy coating (which some people at the bbq really liked about them) But after making these highly requested appetizers several times I've found the right amount and they are fantastic. Almost everyone I've ever made them for has asked for the recipe which makes them an impressive success at any get together. They're ALWAYS the first thing to disappear, so I'm always sure to bring plenty as people seem disappointed when they're gone.

Baked Slow Cooker Chicken

I was intrigued by the thought of roasting a chicken in the slow cooker so I had to try it. I was a little nervous using aluminum balls so I had 3 old small potatoes as my stand that I discarded afterward. After reading other reviews I heavily seasoned the chicken with poultry seasoning and added sprigs of rosemary and thyme and sage into the cavity. Even then I could just taste a hint of the spices so without it I know it would have been bland. Next time I'll add more spices under the skin with some butter. Mine did turn out a little dry too, and that was after adding a half can of broth to it (didn't want the potatoes to start cooking on a dry surface but the chicken wasn't touching it) and then also I cut the cooking time by an hr (meat thermometer said it was over cooked even at that time). It did turn out good though but not browned. The meat was very tender and the bird fell apart right as I was setting it onto the plate. It deboned very easy which I used the leftovers for soup the next day. I may just use this as a starter for cooking the chicken for chicken noodle soup for now on. Next time I'll also try cooking the chicken -breast side down- to see if that reserves some moisture in the breasts.

Mushroom Potatoes

I use to have a similar recipe like this for the dutch oven that I lost and so when I saw this I had to try it and see if it were close, and it was! Very yummy. The only thing I changed was I used fresh mushrooms, mixed all the ingredients together in the beginning and added cheese to the mix and a couple strips of bacon cut up (my old recipe had bacon). It turned out awesome, I made alot expecting to have leftovers for the next day but it ALL got eaten. Thanks for a great recipe!

Raspberry and Almond Shortbread Thumbprints

These were so good and easy! I followed the recipe exactly and then refridgerated the dough before baking and they turned out perfect. After tasting one without the glaze I thought they were great without it so I left it off since I was adding them to cookie trays for xmas and thought they'd be to messy with it, but then I got home and added glaze to the ones I kept for ourselves and they were absolutely amazing with the icing. I felt like I cheated my friends and family out of an even better cookie than what they already were. Planning on making another batch soon cuz they went way to fast!

Andie's Stuffed Mushrooms

These got many compliments at the xmas party I took them to, but were just a little strong on the garlic for me. It does make way to much stuffing and I had a hard time wasting it so I later added an egg to help hold it together for turning it into meatballs and then baked them for spaghetti. Turned out ok i guess for a leftover concoction.

Chocolate Chip Banana Bread II

Linda's Lasagna

This is the one! I love lasagna so I've tried many recipes looking for that special one and this is it. The only change I made was that I added fresh mushrooms and a bit more water to the sauce. STICK WITH THE COTTAGE CHEESE! I decided to try the cottage cheese instead of the ricotta like many others changed and I'm glad I stayed with cottage cheese. I did blend the cottage cheese up with a hand mixer however so it came out to the same consistancy as ricotta and so there wouldn't be any noticable curds in the lasagna. I've used ricotta on many other recipes and the cottage cheese beats it in flavor and creaminess by far!!! I will never use ricotta again. Thanks for such a great recipe!

Strawberry Crepe Roll-Ups

Excellent! Much easier than I thought they would be to make. I did change the filling though. I used strawberry Glaze instead of the preserve and mixed it in with the strawberries, then I also made a fruit dip mixture (marshmellow cream mixed with cream cheese) and spread it inside too, to make strawberries 'n cream crepes. Also sprinkled chopped walnuts inside which were the icing on the cake! I had it for breakfast then again for dessert that night! Sooo Good, can't express that enough!

Slow-Cooked Chili

This was definetly lacking flavor. Needs alot more chili powder. It was my first time making chili and my hisband may never let me make it again. It's the only thing he's said he didn't like that I've ever made because is had no flavor at all. I also only added one can of beans (not a bean person)but really did enjoy the combination of all the other ingredients. Just lacked seasoning.
