Thai-Style Peanut Sauce with Honey

I have made this many times and it is always yummy. I use coconut aminos instead of soy sauce because I'm allergic to soy and it comes out great. I also sometimes sub maple syrup when I don't have any honey. I find the maple syrup version is better for cooking--doesn't burn as quickly and the honey version is better for dipping. I use it as a dipping sauce for spring rolls, a marinade for Asian noodle salad and a chicken satay sauce. It is best if made a few hours or a day in advance so the red pepper flakes and ginger have a chance to mellow.

Easy Chicken Balls

I thought this was a total waste of good ingredients. I really wanted to like these, but they just didn't work the way the recipe was intended and tasted really strange. I mixed up all the ingredients in the first step--the ONLY thing I did differently was to use half the amount of cloves. I wish I had left them out completely because the flavor of cloves and fresh basil was overpowering. Second, the mixture was so wet and sticky there was no way to roll them into balls and then in cracker crumbs. I ended up mixing the crumbs into the chicken so it would hold together and then scooping them into "balls". Even then they were still way too soft to fry in oil, so I baked them like another reviewer had done. Once baked they had a nice texture and got crunchy on the outside, but they tasted awful! My husband was really hungry and managed to eat several by dipping them in mustard, but he said they still tasted too much like cloves.

Chocolate Fudge

Perhaps I did something wrong in the boiling step, but the direction really need to be more precise. Mine did not set up completely so I spooned the soft gooey mess back into the pot and heated it on low heat just enough to re-melt. Then I added about half a box of Rice Krispies and spread it back in the dish. It harded into rice Krispie treats just fine, but was sickeningly sweet. I think even if it had hardened into fudge I would not be able to eat it, it's so sweet.

Spicy Sausage Quiche

This was wonderful tasting! I don't even like egg dishes very much, but this was great. I did one thing differently: I used fresh chile peppers and added the peppers and onions to the skillet with the meat to cook them a little before going in the oven.

This was very good, thank you. I was looking for a warm recipe with cucumbers and pasta in it. I didn't have feta and used parmesan as another reviewer suggested. I also used canned organic tomatoes since I didn't have fresh.

Ham with Redeye Gravy

Not very good at all. It didn't thicken up enough for me and tasted very bitter. We ended up dumping it out and just eating the ham plain.

Chicken Florentine Rice Casserole

This was far from bland. Instead it had TOO MUCH flavor. The spices were just too powerful for the dish. I even cut the spice back by a third. I think it would be good with just plain chicken and maybe one seasoning.

Silver's Savory Chicken and Broccoli Casserole

This was much more flavorful than I expected. I didn't even need to add salt or pepper. I did make slightly more sauce than the recipe called for. I used two cups of chicken broth and 1 cup milk. I didn't think the sauce looked good at all when I poured it on top of the noodles/chicken/broccoli. But after tasting this dish I think the sauce really synthesized the flavors together well.

Creamy Potato Casserole

The taste wasn't bad, but the texture was awful. After an hour in the oven the potatoes still tasted raw and the sour cream made the dish spongey, rather than creamy.

Onion Rings

Parmesan-Black Pepper Arborio Rice Pilaf

This rice has a great flavor. I had to add about a cup of water to the broth to get it cooked through, but it was very good. My husband had a second helping. I think next time I will mix in some stir-fry vegetables.

Easy Scalloped Potatoes

This was an easy and tasty recipe. I used shredded cheddar and monterey jack instead of sliced cheddar. I also sliced to potatoes VERY thin to make sure they cooked in the time stated.
