Raspberry Jalapeno Jelly

I followed the instructions using a non-liquid pectin. I blame my inexperience with making jellies and the fact I completely forgot to strain it as to why it didn't gel up. I tried to re-process it a 2nd time to get it to jell and got slightly better results but still not quite the consistency I was expecting. I really liked the flavor so I figured I'd give it a try even though they didn't gel right. At a recent family event I had a jar in the fridge with some cream cheese. When I cam down from the attic EVERYONE was around the breakfast bar eating my jelly with the crackers and cream cheese asking where I'd gotten it. So just a reminder: IT doesn't have to be country fair award winning pretty or perfect to be AMAZING. I'm planning to make this again keeping notes on what works with the brands I typically use.

Baby Carrots with Dill Butter

I wanted to like this recipe but there was too much lemon and it felt like it was missing something. I'd make them again if I needed a quick side dish and had all of this on hand but I'd rather find something different to eat.

Haddock Marinara

This was delicious, it's a little too much sauce but that's easy to deal with when plating. I put it over linguine and it was great. I softened the onion and garlic in butter then boiled my pasta in any remnants from that pan. I'll definitely cook this again!

Savory Grilled Potatoes

I've made these potatoes three times this past week, they're so good and easy to make. I love that I already had everything in my kitchen so they're a great last minute addition. The last time I made them without the butter and couldn't taste a difference between with and without butter so I will probably continue to omit that ingredient.

Basil, Tomato and Mozzarella Sandwich

I had this on whole wheat bagel bread today for lunch and it was spectacular! Some notes: - Cut the basil leaves, not chop, but whole leaves tend to pull right out with each bite. - I drizzled the oil and vinegar on the bread, layered on the tomato, basil and mozzarella then drizzled some more and then toasted lightly. - Next time I will lightly toast the bread first too! It's a perfect lunch for work, I have everything pre-sliced in baggies in the fridge ready to be made in the toaster oven at work tomorrow!

Cod with Italian Crumb Topping

After reading reviews I decided to forgo the egg whites and rub lemon and mayo on the fish before I spooned the topping on. I forgot the oil in the topping mix which wasn't missed at all in the final product. This was quick and easy and reduced to a great meal for one!

Hudson's Baked Tilapia with Dill Sauce

I didn't have any Cajun spice mix on hand so I just used pepper/paprika/season salt. The fish was amazing and the sauce was delicious. The sauce was kind-of a lighter version of a tartar sauce and was absolutely perfect for ringing out the mild flavor of the fish. I bet it'd be a great sandwich spread too!!

Garlic Dill New Potatoes

These are so delicious. I boil them in water with a little salt because I don't have the steamer basket to steam them. Watch out they're easy to over garlic for all you other garlic fiends out there!

Hot Artichoke and Spinach Dip II

This is the hit of the party. I add extra garlic and extra spinach and this was spot on with a bag of tortilla chips. To really make it perfect throw a layer of tortilla chips (scoops work best) into the toaster oven. Warm chips + warm dip = perfect with beer for football on a Sunday.

Lemon Berry Smoothie

Substituted the strawberries with raspberries (allergy) and as my first home made smoothie it came out great! Super tasty, and the lemonade mix adds a great hint of extra flavor I've never noticed in smoothies I've had before! I'll be making this again and again.

Broiled Tilapia Parmesan

This was a perfect recipe! I don't think my boyfriend really likes fish as much as I do but he has asked when we are having this again! Add a bit of mustard to the topping to kick it up a bit. I used Boars Head Country Dijon the last time I made this and it was delicious, just don't go overboard!

Frozen Raspberry Cheesecakes

I didn't have the appropriate dish ware for this recipe so I used plastic cups which created a horrible shape that tipped over but it made for a perfect serving size! I used Nilla Wafers for the crust and raspberry sorbet and it really complemented the cheesecake. I'm excited to try with other sorbet flavors.
