Curried Bean Salad

Really good as is. I did use frozen corn and add 1/2 of a chopped cucumber and a green pepper. After eating it straight I tried it with about 2 Tbsp plain fat-free yogurt in 1/2 cup of the salad. It was excellent that way as well. Either way, the seasoning was great if you like garlic and food with some kick.

Midwestern Pork Chop Dinner

I followed the recipe exactly, and it was rather bland. The veggies were the best part. I think with some tweaking it could be better. I think adding some thyme and basil to the pork chops when I brown them will help perk them up, and I'll use cream of something soup with the milk. I'd also like to try adding garlic and onions. Not a bad base recipe, I'll try it with modifications next time.

New York Cheesecake

Best cheesecake I've ever had. I made it gluten-free with a pecan/butter/sugar crust. The filling is creamy and rich, everything you'd want in a cheesecake! You've got to try this one!

Mandarin Orange Cake I

Absolutely fantastic! The cake was moist and the frosting was so fluffy! Really easy to lighten up this recipe with sugar free pudding mix and light cool whip. I will be making this again!

Microwave Truffles

Such a great easy recipe! Just as good as the ones that take all day to coat with chocolate, but they came together in just a few minutes. I made them yesterday and they seem to be holding up just fine at room temp. I tried them with pecans, coconut, and crushed candy canes (I recommend the candy canes, there's something about chocolate and peppermint). I only had bittersweet chocolate, so I added about 1/3 cup powdered sugar to each batch. Still came out perfect.

Butternut Squash Fries

Really good flavor. I did toss with about 1 tsp of olive oil before baking, no trouble with sticking. I couldn't stop snacking on them right out of the pan!

Sweet Potato Casserole II

Really good. It had more depth of flavor than any dish like this I've had before. I added extra cinnamon and some nutmeg to sweet potatoes, and I sprinkled the whole thing with cinnamon before baking. I used the hand mixer right in the 9x13 pan, anything to avoid washing another bowl! Easy and good!

Famous Chicken Adobo

Really good. A little salty for my taste, but I did add 1c chicken broth so it might have been my fault. I will add water next time to keep the sauce thin while the chicken cooks. I also added about 1 Tbsp brown sugar, it gave it a nice contrast. Don't skimp on the onions! Next time I'll probably double the onions, my husband (not an onion addict) was eating them out of the pan! Certainly one to try again.

Spicy Black Bean Cakes

Really, really good! I didn't have the jalapenos so I added some cayenne pepper instead. Microwaved the sweet potato as suggested and the texture was perfect. My kids (4, 3, and 1) loved them. The lime sour cream was fantastic, even without the jalapenos. I would give this recipe 6 stars if I could!

Roasted Cajun Potatoes

Pretty good. I followed the recipe exactly but I lowered the temp to 350 so I could roast the potatoes along with a chicken. It took about 1 1/2 hours and the timing was perfect, they were crispy on the outside and soft on the inside. I thought they were a little bland, next time I'll add a couple more cloves of garlic and some cumin. My husband said they were better with gravy on them. Still, a good basic recipe to start from.

Bean Quesadillas

This is a great recipe. Just the filling is so versatile. I've made the delicious quesadillas many times, and I use the leftover bean filling to make fantastic omelets. You can spread it over tortilla chips with some cheese and pop in the microwave for instant nachos. I've even tossed the leftover filling in vegetable broth with a little cooked rice and made a great soup! Delicious, cheap, no meat, what more could you ask for???

Addictive Sweet Potato Burritos

Awesome recipe! I've made this many times for my family, my three-year-old asks for it often. I like to use half black beans and half red kidneys. I throw the mashed sweet potato in with the beans before filling the burritos just for convenience. They are very filling, and make a lot. I like to bake them (or use a countertop grill) and wrap the extra burritos in foil and freeze for an easy lunch. By the way, any extra filling can be used like refried beans, really good spread on a tortilla and fried with cheese quesadilla style. One of our favorite recipes of all time!

Super-Delicious Zuppa Toscana

Really, really good. I used a few slices of leftover bacon crumbled, shallots instead of onion (personal preference) and thickened some whole milk with cornstarch in place of the cream. Certainly doesn't make it healthy, but it was still rich and creamy. It will be great for a cold winter night!

Mom's Buttercream Frosting

Light and not at all gritty, despite the granulated sugar. I cooked the milk/flour paste until about the thickness of white glue. Beat for 5 minutes with mixer. Really good!
