Curry Pumpkin Soup

This is a fantastic recipe !!! I usually make it exactly as written , but sometimes will add finely diced peeled apples. I like to take it to work with me for my supper. I add a salad and savory crackers and an small cup of diced canned pears with a ginger snap added to malke ginger pears. I usually omit the pumpkin seeds (personal choice) Thanks Mary.

Marinated Grilled Chicken II

Made this last night when my grand daughter was over. So simple, and so good. Had only low calorie Italian derssing, but I really dont see any difference. Made exactly as written, except divided in half as there was only the two of us. Next time (I will be making this again soon) will add a little more cayenne pepper, as the samll amount was not noticable. I also cooked it on my panini grill as I did not want to fire up the grill for 2 chicken breasts. Fantastic! Sorry I did not make the full recipe so as to have left overs to take to work for lunch.

Chicken Livers with Red Wine and Bacon

WOW! What a yummy recipe. Cut recipe in 1/4s as I made it for only one person. I did not have dry red wine, but did have some Mogen David Concord Grape wine, cooked them to reduce the wine and make a glaze.Also omited the olives as I don't care for them. They turned out fantastic. Served them with a baked potato, peas and 3 bean salad.Thanks Va , for a wonderful recipe. They will be on my regular rotation.

I never heard of this, but it sounds delicious and will be trying it soon. Looks like it is good for you also, and without alot of extra calories you can have a tasty dessert.

Zesty Grilled Veggies

What could be easier? These are delicious, a real favorite at backyard BBQs. I did add mushrooms, yellow summer squash and tomatoes, and substituted green bell pepper for some of the red and yellow bell pepper. Very colorful. They were even good the next day, reheated.

Oven Roasted Potatoes

Use Yukon potatoes cut in 8ths or new/reds cut in 1/4s. Put in lg plastic bag with oil. Add salt and BLACK pepper. Forget the herbs-they conflict. Add 2T dried rosemary, the garlic--more if you like-- thats it salt, pepper, garlic, rosemary. Shake the bag and let it sit on the counter for no more than 10 min shaking occasionally . If desired subsitute basil for the rosemary. Then bake., You get the idea. Keep it simple

Easy Sausage Strata

Fantastic! I did change it a little, though.First, I cut it back to serve 2 poeple. Then I used a couple of English muffins that had been in the fridge for about a week. Sine I had some bacon and no sausage, I used the bacon . Then I sauteed onions and fresh mushrooms in the drippings. Also added frozen, thawed chopped spinach layered with the veggies. Changed the cheese to a mixture of Montery Jack and Fontina cheeses. About 15 min before it was done I sprinkled 1/2 chopped plum tomato and Parmesan over the top for color. It really wasn't very much like the original, but it sure tasted good. I agree with other reviewers in that it tastes even better the second day.

Granny's Swiss Steak

Have made this several times and each time my husband raves about how good it is and how much he enjoys it. I have, however, changed the method ever so slightly, in that I dump all the veggies back in the pan with a tad bit more olive oil and saute till slightly browned. I then dump them all atop the meat and sprinkle with the soup mix and oergano. I then mix the juice and ketchup and pour over all. Cover and bake for 1 hour , checking about 1/2 way through to make sure there is enough liquid. Is wonderful with baked patatoes that were put in the oven at the start.
