Spicy Lime-Cilantro Marinated Flank Steak

This marinade is a good start but it needs something more to give it a more complex flavor. All we tasted were onions and cilantro. Maybe it needs more honey since we couldn't even tell there was any sweetness at all. Way too chunky from the onions and garlic even after being pureed. Overall, not a bad start, it just needs something more - and why use corn oil when olive oil is so much better?

Firecracker Grilled Alaska Salmon

By far the best marinade for salmon I have had! FANTASTIC!! I did make another small batch of the sauce but reduced the amount of crushed red pepper so I could have a sauce to drizzle on top of the salmon. YUM!!

Yakisoba Chicken

Excellent if you're looking for something more flavorful than just standard chicken dishes!! I used more chinese vegetables and left out the cabbage since my husband doesn't like it. Also, I used UDON noodles instead - they are more like lo mein noodles. Excellent recipe!!

West Coast Cod and Shrimp

I give this only 3 stars because I had to do a lot of tweaking of this recipe. The sauce was way too bland so I added about 2 tsp of Old Bay seasoning, more garlic, and some crab meat for extra flavor. The sauce was great until it baked in the dish with the cod which made it extremely runny. If you plan to make this, make sure the sauce is too thick so the liquid from the fish mixes when baked and turns out a nice consistancy.

Pumpkin Cheesecake Bars

This is a fabulous recipe and it's even better using gingerbread cake mix instead of pound cake and then putting the pumpkin pie spice in the cheesecake filling. It really gives it a great flavor with the gingerbread crust! I didn't change the rest except to omit the nuts. My father in law hates cheesecake but thought these were great (since we told him they were "pumpkin bars")!!

Avocado-Lime Shrimp Salad (Ensalada de Camarones con Aguacate y Limon)

This was a fabulous salad however I used the dressing from the "Mexican Bean Salad" on Allrecipes and it was even better than just lime juice. I also added frozen corn and some diced jalepeno. WONDERFUL!!

Avocado-Shrimp Salad

This is a great base for the salad but I use the dressing from "Mexican Bean Salad" on this site. It goes PERFECTLY together!! I also add cucumbers, black olives, and fresh sweet corn. I also use raw shrimp and cook myself, since most store bought pre-cooked shrimp is way overcooked.

This dressing is the BOMB!! I use it on so many other summer salads including Shrimp-Avocado salad on AR. Fresh ingredients & herbs or a must for this lively salad.

Breakfast Pies

Good, but like many others, I had to use a lot more eggs! I used the Pillsbury buttermilk biscuits in a can and had to use 8 medium eggs just to fill my 12-cake cupcake pan (and it's not a huge muffin, they are regular size). I also omitted peppers & onions and added pepper & garlic powder to scrambled egg mixture.

Lemon Square Bars

DO NOT MELT BUTTER!!! I followed the recipe exactly with 1 cup of melted butter and the crust turned out flat, hard to cut, and greasy. All other lemon bar recipes say to cut in the butter to the flour/sugar mixture - this creates a flakier crust. Lemon filling was wonderful but crust was not!! Once again, DO NOT USE MELTED BUTTER!!!
