Sam's Famous Carrot Cake

The first time I made this recipe I followed it exactly. I got rave reviews for it. The second time I made this cake I made some adjustments: -I used dried cranberries instead of raisins. The tartness of the cranberries really complimented how sweet this cake is. I added double vanilla, double cinnamon, a pinch of clove and and pinch of nutmeg. The second cake was made for an office party and everyone went crazy over it! The second cake had more enthusiastic feedback. Also, this cake is significantly better the next day.

Pumpkin Pie Bars by EAGLE BRAND®

I made this for Christmas last year and everyone LOVED them! I doubled the amount for the crust since that is my favorite part. DELICIOUS!

Pumpkin Roll

Holiday Cranberry Chutney

Cindy's Pumpkin Pie

Absolutely amazing! I don't care for pumpkin pie, but I LOVED this one! Taking another reviewers suggestion, I melted the ice cream in the microwave until luke warm. I only used two cups of the melted ice cream. Also, I don't know if my measurements were off, but my two pies came out very thin. Next time I'm going to double the recipe, and make 3 pies out of it instead of 4. I highly recommend this recipe! Went over great @ Thanksgiving and will be making it again for Christmas.

Jeff's Chili Con Queso

This is the best Chili Con Queso I've ever had, plus it was SUPER easy to make. Following the advice from some other reviews I used Velveeta Mexican cheese. I used Tillamook's Medium cheese, I feel that Tillamooks has a much smoother texture that store brand cheeses. I also used about 10 ounces of salsa, instead of only 7. Let's see, I used the whole can of chili, put about 2 teaspoons of chili powder and 3 dashes of Trappy's Louisiana Hot Sauce. It turned out wonderfully and had a bit of a kick from the extra salsa, chili powder, and hot sauce. I highly recommend this recipe, Jeffo here really knows his stuff.
