Abby's Chicken Rollatini

One word: WOW! I substituted Havarti cheese for Mozzarella (I love havarti) and Pancetta for the Proscuitto (it was all they had at the store). We made it last week and people are still talking!

Pesto, Goat Cheese, and Sun-dried Tomatoes Quiche

I just got done making and enjoying this meal! I was expecting the flavors to be overpowering, but they all actually complimented each other quite well! I didn't really measure the pesto, goat cheese or tomatoes, just eye-balled it :-)

Chocolate Cobbler

I really liked this dessert, and even my hubby did and he's not near as much as a chocoholic as I am! I followed the recipe as it was written and served with Vanilla Ice Cream. I will make it again, but maybe try to find the Hershey's Special Dark Cocoa instead of the regular.

Cherry Cheesecake Dessert

My hubby requested cherry cheesecake, so I made this for dinner with some friends of ours and it was a hit! I followed the recipe except for one change, I used cinnamon graham crackers, it gave it a little something extra :-)

Fast and Delicious Black Bean Soup

My hubby loved this!! I made some changes as suggested by others: Red bell pepper instead of green, 2 carrots, double the cumin (my hub added tobasco to his) and I served it in a sourdough bread bowl. Delish!!

Homemade Maple Syrup

Cheddar Chicken Spaghetti

Very good, I used Reduced fat colby jack rather than cheddar, and added mushrooms and broccoli to the mix to give it some veggies. Very good and would make again.

Cordon Bleu Casserole

One word: YUMMY!! I used Ritz Wheat crackers for the top instead of soft bread crumbs and chicken instead of turkey. This was a great dinner and everyone went back for seconds (and even thirds!). Next time I might add some mushrooms to the mix too!

Mild Cheesy Chicken Enchiladas

Eileen's Meatloaf

Wow! My husband reallly doesn't care for meatloaf, but he said this one was amazing!! The only thing I changed was reducing the amount of bread crumbs to 1 cup and I added some chopped mushrooms. This one is DEFINATELY a keeper!!

Cheesy Chicken Pot Pie

I made this recipe for a group of friends and my husband and they loved it! It was definatly a keeper, however, I used low-sodium cream of chicken soup in place of the chicken stock, 1/2 the amount of cornstarch, added corn and cream cheese, as well as more celery, carrots, and chicken. I also added black pepper and parsley to give it some flavor, and used both pastries for the crust and none on the bottom. It is definatly something I will make again, it was a hit!

No Bake Peanut Butter Pie

Made a low fat version for dinner one night with friends. Added chopped Dark Chocolate Reese's PB Cups and used chocolate pie crust. Will do again :-)
