Spinach and Feta Pita Bake

This was so good! I didn't know spinach could cook in the oven that quick. I followed the recipe exactly, except I didn't measure anything, I just eyeballed it. I used pita pockets and broke them in half. Very delicious recipe.

Southern Seafood Gumbo

This was really good! I followed the recipe to a tee, except I didn't used spicy V8 and I didn't use cayenne pepper. My family doesn't like spicy foods, I do though! At the end I just seasoned it with salt to our taste.

Golden Potato Soup

Wow this was really good! I feel like I should have put clams in there to make clam chowder. Really good dish. I made toasted bread to go along side.

Greek Saganaki

This was really good!. BUT you have to like feta cheese. My 3 year old loved it. I actually saw someone make this on food tv in a restaurant on one of the Greek Islands. Oh by the way, this actually gets you full as a meal.

Wow. Very good. Didn't know a tomato sandwich could be so good and juicy. I only used 2 tomatoes for 2 sandwiches and that was plenty.

Vegetable Medley I

WoW! I have been making this recipe since June. This is DELICIOUS! My whole family loves it and doesn't mind having it 2 or 3 weeks in a row. I always put extra cheese in it and usually serve it with pasta. Thanks!

Shrimp Scampi Bake

Really good! I followed the recipe exactly for 4 users and served it over pasta noodles. The Dijon does give it a little something, if i hadn't have cooked it I wouldn't have known that mustard was in there. I will try to use olive oil in place of the butter next time though, because my husband got pretty disgusted at the end of eating when he saw all the butter at the bottom of his bowl.

Fish Tacos

My husband LOVED these! He immediately said "put these on our list of foods". The sauce was very good. I agree with another user to let the sauce sit for a few hours, because when I ate it on my taco after I fixed it, it was okay, I didn't see the big deal. But when I ate some more about 4 hours later with some more fish, it was delicious. I also used tilapia since that's what we had on hand and I didn't put capers or jalapenos in the sauce. And we topped our tacos with the white sauce, cabbage and Pico de Gallo. Delicious!

Roasted Vegetables

This recipe is delicious! I use zucchini and carrots instead of squash. I put the onions, peppers and zucchini in at the last 15 minutes of cook time. I love the sweetness that comes from the sweet potatoes and carrots when cooked like this. I have made these vegetable twice in 2 weeks. Thanks.
