Tortillas II

I'm just learning the art of tortilla making, so my rating could be a bit unfair to the recipe. This is the second one I've tried and I'm very happy with the taste - fresh tortillas are amazing. I have a lot of trouble rolling them out, even though I add extra liquid and let the dough rest. I probably need a smaller rolling pin, etc and I'll be able to roll them out thinner, which I think makes them a lot better. Thanks for the recipe!!

Herbed Chicken Nuggets

Great recipe! My husband and I really liked it. I left out the veg oil, b/c I was worried it would clump up the breading and it seemed unnecessary nutritionally. I love the wheat germ - nice way to sneak in good things without the "too healthy" taste. I used homemade whole wheat bread crumbs that were not seasoned, so I added a teaspoon or so of salt, and it was plenty flavorful.

Fantastic Focaccia Bread

This was great! I doubled the salt and I had to add a little more liquid, as the dough was a bit dry. Vegetables, olive oil and sea salt/herb mixture topped it off.

Tasty Tuna Burgers

This was soo good! I just adjusted the spices a little more to my liking - I wanted them to have a sort of convincing meaty taste. I subbed the Italian seasonings for some fresh garlic and some cumin, and subbed parsley for the dill weed. This was great we'll make it again!

Banana Cream Pie I

The pudding was so good! I think this is a lot of bananas, but depending on their size, just decide how much you like... I used a combo of coconut milk (beverage) and vanilla soy milk, and made layers of pudding/bananas instead of just a big pile, and used a chocolate graham cracker crust. Also I took a reviewer's advise and didn't bake it, just refrigerated. Came out great.

Downeast Maine Pumpkin Bread

This is great! But it does NOT need a full cup oil - can do half applesauce half oil or even 1/4 applesauce/3/4 oil. Also I cut the sugar in half and NO ONE noticed, people raved though. I sprinkled white chocolate chips on one and chocolate chips on another loaf. White whole wheat flour, added vanilla, adjusted spices to my liking and replaced apple juice with the water to add flavor.

Blueberry Orange Bran Muffin

We LOVED this! I added a splash of vanilla extract, used 1 cup crushed bran flakes instead of wheat bran (b/c that's what I had), white whole wheat flour, and a combo of honey and brown sugar. They are very sweet! This is great. You definitely need to follow the instructions on letting the batter sit for 10 min. This will let the oat and wheat bran absorb into the liquid and will prevent the sogginess some people had trouble with.

Cranberry Bars

These were great but I believe that the following changes are necessary: 1)Add more oats. I ended up added 1 or more cups oats to the crust and almost 2 cups more to the reserved topping, to make it manageable to place on top as well as to actually have some texture. The amount of brown sugar is a little much. If you like it sweet, that's fine but it is possible to reduce it at least to a 1/2 cup. Everyone enjoyed it!

Strawberry Crepe Roll-Ups

Sooo good! The vanilla is important and I also added a couple teaspoons of vinegar to the milk to "sour" it. The crepes had a really nice flavor, and are so versatile with fillings.

Breakfast Muffins

Pretty good, I did fresh blueberry and peach, added vanilla and subbed a combo of oil and applesauce for the butter. I added a little more sugar because it didnt seem like a lot, and I added the juice of half a lemon to the milk. It tasted a tiny bit biscuit-y and I'm not sure why.

Chewy Peanut Butter Brownies

Really good - like other people, I doubled the recipe, increased the pb by a few tbs, decreased the flour a little, and used 3 instead of 4 eggs in the doubled recipe. This came out amazing, though I will use less sugar next time, it was really sweet. I put choc chips in it and disappeared quickly.

Crunchy Pumpkin Pie Granola

Make this!!!! It's a great recipe. I didn't think you could make granola without any oil, so I have to say I was skeptical (I added a couple teaspoons but probably didn't need to). This smells amazing baking, and you can adapt it to taste easily. I added a few tbs of pumpkin puree, my own mix of ginger, cinnamon and nutmeg, and did almonds, craisins, raisins, and chopped apricot plus wheat germ and flax meal. It's really no fail, just make sure you stir it in the oven so it doesn't burn. I'm hoping it stays crunchy b/c some people said that it got soft after a day!

Chocolate Chip Dream Bars

Really great, almost too chocolatey. I used an 8x8 pan so it would be thicker, it was just right that way. I didn't do the glaze, it wasn't necessary and it disappeared really fast.

Dark Chocolate Cake II

This recipe makes a really no-fail easy chocolate cake that turns out delicious. I added 2 tsp vanilla extract to the batter and after baking it, I frosted it w/chocolate ganache.

Cinnamon, Spice and Everything Nice Cookies

These are amazing!!! I adjusted the spices a bit, only about a scant teaspoon nutmeg and I added cinnamon. Also, I used white whole wheat flour. I used mostly earth balance buttery spread and some coconut oil instead of shortening. This is one of the best cookie recipes I've ever made. I'm sure if I'd had the cinnamon chips it would have been even better. Seriously amazing cookies.

Best Brownies

Healthy substitutions: I replaced one of the eggs with a tablespoon of ground flax seeds/3 tbs of water and it worked great. I also replaced some of the butter with applesauce and used part white whole wheat flour.
