Mini Meatloaves
This is our family's favorite meatloaf recipe (originally seen in Taste of Home). I usually make 1.5-2 times the original proportion of sauce because it is so good. On the other hand, I also make a couple of the loaves without any of the ketchup mixture because some of the family does not like that -- and it is still moist and flavorful. Definitely make more mini loaves (double or triple recipe) if your family are big eaters! Leftovers are great cold! PS - Never added the extra salt - and we have never missed it.

Slow Cooker Risotto
To Karin - you MUST use Arborio rice - no other type will work!! Only Arborio rice has enough starch to become risotto. (I learned that the hard way!)

Chanterelle Risotto
I add this review in case anyone else is using this recipe (like I did) for the first time making Risotto. IT MUST BE ARBORIO RICE! I realize that for an experienced cook, this is like, "duh," but I had never done this before and used Basmati. After doing a bit more research I realized that Basmati will never work because there's not enough starch. When I made the recipe again with Aborio, it was excellent - even without mushrooms or parm. Thanks!
