Whole Grain Pancakes

I followed the recipe exactly except that I doubled it (and actually got 16 pancakes--so many times I don't get how many the recipes states) and I used butter to fry the pancakes. They are delicious and the kids loved them. I really enjoy the flavor and the crunch from the corn meal.

Win's Shrimp and Spaghetti

This is surprisingly tasty for how easy it is, but the amount of butter is excessive. We love butter and use it a lot, but one half cup is plenty here! Also very good without the parmesan.

The Best Rolled Sugar Cookies

I added a little orange zest and used 3 cups of sugar plus a little extra vanilla (probably two teaspoons) and these were delicious! I used powdered sugar to roll the dough out; it wasn't sticky at all. I used parchment paper and cooked 1/2 inch thick, smallish cookies for 5.5 minutes and they are perfect.

Ground Beef Enchiladas

I was a little leery of a recipe for enchiladas that contained condensed chicken soup, but the enchiladas were delicious. I ended up using cream of mushroom soup and my own mix of spices instead of a packet of taco seasoning (cheaper). I also put regular white onions in with the meat b/c I didn't want to buy green onions. It was well received by my family.

Irish Cream Bundt Cake

I've made this twice and it was a big hit. I used a previous poster's suggestion of pouring the glaze back into the pan and then putting the cake back in to soak up the glaze rather than drizzling it on top. But I only did it with about 3/4 of the glaze. The rest I let cool for a bit so it drizzled nicely and didn't just run off onto the cake plate.
