Moroccan Vegetable Soup

Reviewed: May 15, 2009
Made this recipe as is and it was delicious! Both my children and my husband liked it. Good way to sneak in the veggies with little ones :).

Basic Chicken Salad

Reviewed: Apr. 11, 2009
I made this recipe with canned white meat chicken and substituted dried cranberries for the celery and it was awesome! Since I only had a 5 oz can of chicken, scaled the recipe down to 1/4 of original..

Greek Pasta Salad

Reviewed: Jan. 18, 2009
I thought this was a very good salad, with some changes to the dressing. Personally I omitted the olives, not an olive fan. I used rotini pasta (14.5oz box) instead of the penne and used a small Walla Walla onion. The changes I made to the dressing was to add 1/3 cup seasoned rice vinegar, 2 tbsp fresh lemon juice, a little over 1/2 tsp salt and 1 tsp crushed garlic, 1 1/2 tsp sweet basil and some generous shakes of parsley. I would highly recommend letting it marinate overnight before eating it to allow the flavors to blend better (I made it last night and it tasted way better this afternoon). I also added a little crumbled goat cheese to my bowl and a few more shakes of rice vinegar after serving myself. Might need to up the vinegar a little more next time. With all those changes it was excellent.

Black Bean Vegetable Soup

Reviewed: Dec. 26, 2008
This is a pretty good bean soup recipe. I did make a few changes. I increased the garlic to about a tablespoon of crushed and upped the cumin to two teaspoons (as an increase was recommended by another reviewer). The only canned beans I had on hand were Kidney and Pinto, so I put in the Pinto and pureed the Kidney beans with the stewed tomatoes. I also decided to add a small can of green beans I had on hand, thinking it would be a nice touch. It turn out tasty, though we did add a bit of salt to our soup bowls. I very much recommend the increased amounts of cumin and garlic, as it would have been a little on the bland side without it.

Honey Corn Bread

Reviewed: Dec. 26, 2008
Finally, a cornbread recipe I like that doesn't taste weird or bland! The only changes I made were I increased the salt to about 1/3-1/2 tsp, used 1/3 cup golden brown sugar, and used the 2% milk and canned corn I had on hand. It turned out delicious and has an almost cake-like texture and held together pretty well. Scrumm-diddly!

Home Style Macaroni and Cheese

Reviewed: Dec. 15, 2008
This is an excellent recipe. The only deviation I took was I added about 1/8 tsp of cayenne. Turned out really well. My husband and girls loved it. The reason I gave it 4 stars is that even though I enjoyed the cream cheese and flavor, it made it a little too rich for me.

Iced Mochas

Reviewed: Jun. 6, 2008
Thank you so much for this recipe and all the helpful tips from fellow reviewers! Based on some of the reviews, I used 6 coffee cubes, 4 ice cubes, 1 cup vanilla Soy Dream, 1/4 cup Hershey's Chocolate Syrup and 1/4 cup Smucker's Caramel Sundae Syrup. Serious yumminess!! Woohoo! And pennies saved! Thank you again! :) I shall see how it tastes next time with 3 tbsp chocolate syrup and 3 tbsp caramel syrup.

Curried Coconut Chicken

Reviewed: Jun. 4, 2007
Absolutely delicious! To lessen the cost I purchased some frozen chicken tenderloins and baked them partially in the oven before chopping them up. Also purchased some organic curry powder from our local Co-op and used a Walla walla onion. Even though I messed up a little by adding the garlic first and rushing to add the curry powder before the garlic burned and then rushed in the onions, the recipe still turned out real yummy. Definitely a keeper :). Thanks for such a great recipe :).

Old Fashioned Peanut Butter Chocolate Chip Cookies

Reviewed: Jun. 3, 2007
This is a very good recipe and I will be making it again. Since I didn't have Splenda on hand, I used Galeriel's measurements for white and brown sugar and they turned out great. I didn't put in the chocolate chips. My husband thought they could use a bit more peanut flavor, so I am thinking about adding some chopped roasted peanuts next time (perhaps substitute it for the chocolate chips, though 1 cup may be enough). I'd also like to try the original version for my parents. Thank you for the yummy recipe and helpful comments :).

Ranch Burgers

Reviewed: May 26, 2007
This recipe was very good, though after reading through several comments I did make some adjustments before trying it out, such as: 1 1/2 lbs ground beef, 1/4 cup plain bread crumbs, 1/2 small/medium onion. Thankfully it came out very delicious and moist with those changes. Thank you for such a yummy recipe and thank you to those who left such helpful comments :).
