Gourmet Sweet Potato Souffle

This was absolutely delicious! The only changes I made were using pumpkin pie spice + cinnamon since those were the only spices I had on hand. I also added a mix of brown sugar, butter, flour and pecans for a topping. Mine took an extra 12 minutes to bake. I got rave reviews and but unfortunately there were no left overs!

Chewy Peanut Butter Chocolate Chip Cookies

I didn't care for these cookies much. The flavor is definitely a 2-star rating because it needs more peanut butter flavor. I even doubled the peanut butter. The only reason I gave it 3 stars is because they do have a great texture and stay soft.

Creamy Chocolate Frosting

This is my favorite frosting! But needs to be doubled to frost and fill a double layer cake. I found that it tastes much better after a day or even a few days. I thought the first day it was too grainy from the powdered sugar (but still delicious). I left the extras in my fridge for 3 days and when I went back to use the rest I had to let it sit out at room temp to soften. It was a little too warm near the wood stove and near melted, so I beat it up well at that temp and put it back in the fridge to firm up. It was absolutely perfect after that. All the graininess was gone and it was even more smooth and creamy after that.

Beef Stew VI

Great beef stew. It had just a unique flavor. I did take other's advice and put the beef in a big zip lock bag with flour, garlic & onion powder before putting in the pan. I then deglazed with 1 cup red wine--it added such a nice flavor. I also added butternut squash to the mix of veggies I added. The "Cheddar Bay Biscuits" from this site were a nice addition to this meal. The only thing I will do differently next time is wait until the last 30 minutes of cooking to add the veggies. They got way too mushy for my taste.

Whipped Cream Cream Cheese Frosting

Fabulous frosting. I used it on the "Too Much Chocolate Cake" recipe from this site. I used 1.5 cups powder sugar instead of regular sugar and beat the cream until it was almost butter! Came out fabulous. Will definitely use again.

Too Much Chocolate Cake

Awesome cake! I was a little skeptical about using a "doctored up" cake mix, but since I've had such bad luck with other chocolate cake recipes, I thought I'd try it. I did follow other's suggestions and the only changed the oil to 1/2 cup and added 1/3 cup milk. I also used mini chocolate chips. I only had 9" round cake pans so I split it between two. I left it in for 55 minutes and it was done perfect. I can't have a cake without frosting, so I used the "Whipped Cream-Cream Cheese Frosting" recipe from this site and sprinkled coconut on top. Everyone loved the cake and frosting combo as it wasn't too sweet. No one could believe this came from a box mix!

New York Cheesecake III

I was happy about not having to use a water bath and it came out absolutely perfect, no cracks! With the exception of adding vanilla, I followed the recipe exactly. The only thing I would do differently next time is cook it just a little longer. I found that in the center it was still just a bit runny. But no one noticed because I just didn't cut the rest of the pieces that far into the center. Everyone raved about it and didn't believe I made it!

Jam Filled Butter Cookies

I tried this recipe 2 times with the same results. My cookies completely flattened out and couldn't even be taken off the cookie sheet without falling apart. I tried the recipe a second time thinking maybe I didn't add the correct amount of flour. It was disaster again. A complete waste of time. I did notice that the recipe did not call for baking powder. I don't know if this made the difference. I gave it 2 stars because the idea of filling butter cookies with jam was a good idea. I ended up using my mothers old butter cookie recipe which was very similar but called for baking powder and vanilla and almond extracts. They came out perfect and delicious. I did do the whole jam thing and they were great. I will stick to that recipe.

Old Fashioned Peach Cobbler

I followed this recipe exactly except for adding 3T of cornstartch. I did not care for this recipe. It would have been much better without the overpowering taste of orange juice. The cinnamon was a bit much too and took away the peachy flavor. It tasted more like "citrus cobbler". I do have to say that the crust was great. If you want a real peachy tasting cobbler perhaps leaving out the OJ and cutting back on the cinnamon would do the trick. Also, even after 3T of cornstartch it was still quite watery!

Extreme Chocolate Cake

Best Big, Fat, Chewy Chocolate Chip Cookie

Great cookies!--better that Mrs. Fields in the mall! I made a double batch and used all brown sugar no white sugar (I ran out). They were fabulous. Also I added some almond extract which added great flavor. The #1 key to soft cookies is BAKING TIME! Don't be fooled by the suggestions of putting dough in fridge or waiting till they cool on the cookie sheet to remove them--who comes up with this stuff?! Since I made a double batch I tried the fridge thing on some of the dough--made NO difference. It all comes down to cooking time. I only put 3 cookies on the sheet at a time till I perfected the cooking time. They didn't look done after 16 minutes but they were. All the ones that cooked longer were hard once they cooled. The ones that cooked for less time stayed soft for days (in a plastic baggie). As all ovens vary I would play around with oven times and don't worry they wont look completely done but after they cool you'll see that they are.

Famous Chicken Francaise

Loved this recipe. I used bottled lemon juice which worked fine. I also added about 3/4 cup of white wine. I found it a bit over powering and will use less next time. I added a lot of minced garlic to the sauce and some cream. The flour egg flour dipping method worked great. Kept the chicken in the oven until the sauce and linguini were done then put it back in the sauce for a few minutes.The breading did not fall off. I also added A LOT of paprika, onion and garlic powder to the flour because I find the flour can be overwhelming.

To Die For Blueberry Muffins

These were really awesome! The only changes I made were to use brown sugar in the mix and topping instead of white (personal preference) and I unfortunately I had the sudden urge to be somewhat healthy and decided to use whole wheat flour. They still turned out delicious but I know they would be even yummier with real flour. But for you health nuts, whole wheat flour does work!

Double Layer Pumpkin Cheesecake

Awesome recipe. I used a generous amount of pumpkin pie spice and also added it to the cheesecake layer. I used extra in the bottom cheesecake layer as others suggested and used sour cream as stated in the first review. I used a pie crust but next time I will double it and use a spring form pan. The layers need to be thicker but there just isn't enough room in a pie crust.

Very good recipe. Everyone loved it. I'm still a sucker for marshmallows on my sweet potatos though. Next time I will try to incorporate them, Thanksgiving just wasn't the same without them!

Butterscotch Bread Pudding

Great recipe! This was my first time making bread pudding and I couldn't believe how incredibly quick and easy this was. I made this exactly as the recipe is written. Next time I will add more butterscotch chips. The only problem was that I made it just for myself and my son...its a lot of bread pudding for 2 people!!
