Gourmet Sweet Potato Classic

Big Hit! Everyone loved these! I used two 15 oz cans of cut yams (just the yams, not the juice). Mixed them in my mixer like some here suggested to get rid of the strings (they wind around the beater, easier to remove). I used only 1/3 cup sugar as suggested by others. I omitted the salt (since I used canned yams). Mixed as directed. Spread into a 9x13 inch dish. Covered with plastic wrap and stored in fridge over night. Added the topping the next morning and cooked as directed. I kept the original amount of brown sugar because I love that kind of topping. Enough for 10 people and some left overs (I served a lot of other things as well, so if serving this as the only potato dish I would double it). Next year I will double it! Teens came back later after dinner asking for more.

Sunday Best Fruit Salad

Very good fruit salad. I added a lot of fruit to mine, just kept adding till I felt that there was plenty of pie filling to cover. I used 3 large apples, 2 bananas, pint of black berries (which get messy when mixed), a lot of grapes, the pineapple (and soaked apples and bananas as directed in recipe), a couple pints of strawberries.

Cake with Buttercream Decorating Frosting

Great Frosting! Easy to make, and tastes really great! I made a (9x12) sheet cake that I cut up and made into a Roblox character (looks like a lego guy). I used a lot of frosting, and had a lot left over. The cake was flat and not dimensional. My 9 year old loved it (I just made it up, nothing fancy...but looked really cute...for a beginner).

Yummy Honey Chicken Kabobs

Great Recipe! I used light soy, and I marinated the chicken overnight (+/- 18 hours). I put the marinade into a gallon ziplock (made one for chicken, and one for veggies, and one for shrimp). Everyone loved everything! Even my mother ...who is picky. Will definately use again! I marinated zucchini, baby bella mushrooms, onions and red pepers. We are new to grilling, and this made us look like we knew what we were doing! Thanks for sharing!

Decorator Frosting

My kids and I love the way this frosting tastes. It is Perfect! Not too sweet! It reminded me of favorite sugar cookies growing up (from church dinners etc). Super easy to make. Does have the consistancy of store bought frosting from a can....reminds me of the "whipped frosting" (how you can see the little wholes in the frosting when you spread it...vs...creamy can frosting that goes on smooth and more solid) but tastes much better and after an hour it is hard enough to stack cookies. Even though the frosting looks more like the "Whipped" can variety...it tastes more like the Creamy can variety (I will admit I am kind of wierd, but to me there is a difference)I personally don't like the whipped kind. Frosting did have a tendancy to lift off cookie while trying to frost. I just covered them with sprinkles for St. Patty's Day. I did two batches, one batch was more than enough for 40 3" cookies.
