Macadamia Nut Crusted Mahi Mahi

This dish was amazing. I made a few changes for vegetarian reasons. such as veggetable stock instead of the chicken. I also dipped the fish in an egg batter before the bread crumb mixture which gave it a crisper crust. Overall this dish was amazing. My husband loved it, and he hates fish!

Pollo (Chicken) Fricassee from Puerto Rico

Grate recipe. I made this for my first meeting with the in-laws and it turned out perfectly. I didn't change any of the sauce, I just used a fryer chicken instead of the dark meat. It had enough spice and zip and it turned out very tender & moist.

Beer Brisket

My brisket turned out WAY too salty, I think because of using the bullion cube. I think next time I will substitute beef broth or add some water to the mix.

Addictive Sweet Potato Burritos

I've had this recipe saved for over a year, I was scared to try it. Finally bit the bullet, and I am so glad I did! It was great! I doubled the recipe and froze half...the were both sooo good! I would use less water in the beans though, ours were a little watery

Black Bean and Corn Quesadillas

These were awesome! I did change a few things because I didn't have the recipe ingredients on hand. I used taco seasoning instead of red pepper flakes, and instead of salsa I used taco sauce, (I don't like tomato chunks :) I also spread a tiny amount butter on each side of the tortilla, and it make them a bit more crispy! These will for sure become a normal in our house!

Creamy Chicken and Wild Rice Soup

I made this recipe with a few changes due to our family's needs, but it was still VERY good. We used rice milk instead of cream, margerine instead of butter. It was still very creamy and yummy. I took a hint from other comments and added chopped carrots and celery. I thought it tasted just like Panarea's!

Brownie Biscotti

pretty good, though I changed only 2 things, I don't like walnuts, so opted for chopped almonds and then used almond extract instead of vanilla. Though these are the first biscotti I've ever made, so they seem good to me!

Very rich and moist! I added raisins and used thin noodles instead of thick. Also took another person's tip to put all the sauce stuff in the blender and blend it all at once, turned out fine and was much more simple. We will be making this one again!

Jewish Style Sweet and Sour Brisket

Very tastey and tender. Will definately make again. I fogot the salt, but we didn't miss it. Though I did use a kosher brisket, so it's kind of already "pre salted"
