Spicy Chipotle Turkey Burgers

SO GOOD. I followed the advice of other reviewers and used 2 chiles, and I put shredded mozzarella inside the burgers by making two thin patties with cheese in between. I'll be making more this week.

Southwest Chipotle Chicken

Easy and delicious! I used a chipotle lime marinade and added half a green pepper, chopped. Only one of the chicken breasts was cooked after 30 minutes, the rest needed about 15 more minutes. My husband loves spicy foods and he thought this was perfect. It was a little spicy for me, but I ate it with slice avocado and on a bed of lettuce, which helped.

Black Bean and Couscous Salad

Delicious! This is a healthy and light side that pairs well with a variety of food. I made it for a potluck, with vegetable broth instead of chicken, following the advice to double the dressing except for the EVOO. I only used one can of black beans, but added a little bit more of the veggies. I'm enjoying it cold out of the fridge for lunch today. I sprinkled on a little chili powder for a little kick.

Vegetarian Chickpea Curry with Turnips

Delicious & easy recipe. I added a lot more veggies because I had them on hand and wanted to get an additional meal or two out of this dish. I followed the directions, but also added a potato, a zucchini, a yellow bell pepper, two jalapenos, and spinach. Really yummy!

Quinoa and Black Bean Chili

Delicious! All the yummy taste of chili with the light freshness of veggies. Loved it with a bit of cheese and crackers. Changed a few things based on what I had in the house. I'll be making this again and again.

Cabbage Sloppy Joes

Delicious! This recipe satisfied my craving for sloppy joes while using up the leftover veggies in my fridge. I threw in some shredded carrots along with all the other vegetables. I didn't have Worcestershire sauce on hand, so I used steak sauce instead and adjusted the sauce ingredients to taste.

Chicken and Gnocchi Soup

Really delicious soup! I'll be making this again and again. I added another can of chicken broth because I like a good amount of liquid to dip bread into, but that's just a personal preference.

Pretzel Turtles

So easy - everyone loves these! I made two large batches. I used up my bag of pecans on the first batch, so I used broken pretzels on the second batch. Both worked well and tasted great. I used square pretzels that were labeled Waffle Pretzels. The other reveiwers are right, cooling these in the fridge makes a huge difference!

Turkey and Yam Spicy Tacos

So delicious! I made a few changes based on the Caribbean-style tacos I've enjoyed at restaurants. I used more Cajun seasoning and tomatillo salsa and a little less chili powder. I served it topped with cilantro, shredded cabbage, crushed pineapple and plain Greek yogurt. Spicy and sweet all in the same bite. I used 3 jalapeno peppers, but I don't think 4 would be too many.

Sesame Seared Tuna

So delicious! I used Fiery Sesame Oil (it has chili powder in it) instead of regular because I love spicy tuna. I didn't use mirin, but I followed the rest of the recipe. I can't wait to have it again.

Tender Tomato Chicken Breasts

I really enjoyed this recipe! But I think I had the pan too hot, by the time my chicken was completely done there wasn't really any sauce left, but the chicken was still nice and juicy. Will certainly make this one again soon.
