One Bowl Chocolate Cake III

Reviewed: Apr. 9, 2010
This cake is amazing and moist!! I upped the cocoa to 1C. The batter was super thin but it turned out great!! I baked it in a 9x13 pan for 40mins. Will be my basic chocolate cake from now on.

Quick and Easy Pizza Crust

Reviewed: Feb. 19, 2010
I just love this recipie! It's so quick and easy and it works if you don't have time for it to rise, or if you do have time. I usually start it when I decide I want pizza for dinner and by the time I have all the other ingredients ready it is ready to use. It's a great time saver!!

Holiday Peppermint Bark

Reviewed: Dec. 18, 2009
I just made this and the finished product tastes great but I had a few problems getting it to work. I decided to use both dark and white chocolate and melted them in a double boiler. The dark layer went fine I was able to smooth it out and put it in the freezer. I let that sit for 15 mins while I melted the white chocolate...when I started adding the white chocolate layer I tried to move fast but the dark chocolate still melted and made the white chocolate look like a brown mess...and the white chocolate set so quickly I didn't even have time to spread it all around let alone press the peppermint candies into it. I melted a little more white chocolate to fill up the holes but I still didn't have candies on top. So in a desperate attempt to make this work I put the whole pan in a cold oven and preheated it to 300F - I checked on it every 30 seconds or so to see if it was melting..before my oven even got preheated it was melted enough that I could press the candies in. End result was really good - very tasty, the layers didn't want to separate the candies didn't fall off. I'm sure it would be easier just doing one layer of chocolate but it tastes way better with two. Not sure what to do different next time to avoid the problems.

This was wonderful! I put a tablespoon of golden syrup in the bottom. I only cooked it for 3mins and it was a perfect consistancy!! I will definately make it again!

Shortbread Crust

Reviewed: Jun. 26, 2008
This tasted wonderful! It fits perfectly pressed into a 9x13 pan, and still delivers a think crust. It was very easy to press into the pan and I made sure I poked a few holes in with a fork to stop it from rising up too much and it worked perfectly. I made this with fresh strawberry pie. Just delicious!!

Grandma's Lemon Meringue Pie

Reviewed: May 19, 2008
This pie was wonderful!! I actually made Mini pies (made in muffin pans) for a potluck dinner. To fill 24 mini pies I had to change the serving to 10, plus I needed a little extra meringue. I used 1/2C of bottled lemon juice and the filling was very lemony but not overly so. The meringue was not as sweet as I have made before, but still tasted great! I let the filling cool for about 45mins - 1hr before topping with the meringue and made sure I sealed it to the crust ( I didn't have any problems with weeping). I will definately make this again!! I had heaps of rave reviews!

Strawberry Muffins

Reviewed: Mar. 28, 2008
These muffins were very tasty although I did make a couple of changes to the recipe: 1. Decreased flour by 1/4 cup 2. Added 1/4 Cup of brown sugar 3. Add 1/2t of vanilla and a little cinnamon to the liquid mixture 4. Used homemade spiced applesauce instead of oil (a much healthier alternative) The result was slightly sweet fruit muffins. I diced the strawberries quite small which seemed to distribute them well while still having chunks of strawberries. I also put half a small strawberry on top. I would definately use this recipe again. It's great to use up bruised strawberries.

Peanut Butter Chicken Skewers

Reviewed: Feb. 12, 2008
I tried this without the skewers but I found the flavor was way too strong. I halved the recipe, cooked the chicken then added the sauce which was very thick. I would like to try it on the skewers - it might tone down the flavor. It was very easy to make though, and for that reason i'll try it again.

Blackberry Cobbler

Reviewed: Jul. 20, 2007
Yum yum yum! This was sooo good!! I had to add about a cup and a half of blueberries to make up the amount of berries but this was fabulous! The berries I had picked were very tart but this recipe made them taste heavenly! I made this per the recipe and I also coated the berries in a little sugar before dropping them in the batter. I'll definately make this again!!

Chicken Satay

Reviewed: Jul. 20, 2007
This was way too salty! I reduced the lemon juice to 1/4 cup and the soy sauce to 1/3 cup, as per other reviewers. I cooked it in the marinade and served over rice, but the saltiness was overwhelming, though it cooked really well. Even the neutral flavor of the rice didn't help. If I tried it again I wouldn't marinade it as long and would try to 'tone down' the saltiness.

Applesauce Cake VI

Reviewed: Jun. 28, 2007
This cake was lovely and moist, but was not sweet enough for my tastes. Granted, I didn't follow the other reviewers suggestions and didn't add the 1/2 cup of extra applesauce in substitution for 1/2 cup of oil but it tasted rather bland and not very appley. It has great potential and with a few changes could be an excellent cake. I may possibly try it again but I will change a few things and see how it goes.

Best Brownies

Reviewed: Jun. 16, 2007
These brownies were absolutely excellent!! Fabulous for a chocolate fix. They were dense and chewy - just the way I like my brownies. I made a double batch, cooked it for about 30mins in a 9x13 pan and dusted it with powdered sugar. I will definately make this again - if you want a fabulous, easy, rich chocolately brownie you need to try this recipie!

Easy Microwave Chocolate Cake

Reviewed: May 21, 2007
I did not like this cake at all! The consistancy was great (very cake like) but the huge serving and was not sweet enough for my tastes. It was made edible by having ice cream with it, but I definately won't try it again. EDIT* I know I said I would never try this again but I was desperate for easy chocolate cake so I read the other reviews and decided to alter it a little and see what I came up with. I simply added 1/2 cup of sugar and 1T of cocoa. The result was a wonderful chocolatey cake with a great consistancy. Given the improvments I would change my rating from 2 stars to 5 stars.
