Byrdhouse Blistered Cherry Tomatoes

Ginger Glazed Mahi Mahi

I loved it! My changes were to decrease the soy sauce by 1T because I'm sensitive to soy;I added a T of olive oil in it's place and sprinkled a little cayenne over the fillets for some heat as well.. I grated my garlic along with my ginger for a "full flavor" please try this recipe with fresh, not powders.. :) Soooooo yummy!

Oaty Cereal Bars

I used "Honey Nut Cheerio's" in this recipe. I was short on the honey so I used half honey and half corn syrup with the sugar. I followed everything else except for throwing in a cup of trail mix instead of the peanuts; I forgot the chips would melt but that was fine, it just gave it a darker color. Let simmer for a few minutes so it the sugar would set when cooled. I don't know why but it didn't look like enough for a 10x13 pan so I quickly greased my 8x8 brownie pan. I cut into squares.

Maple Pecan Shortbread Squares

Just made these and they are still a little warm but I cut them because I couldn't wait.. The smell was just heavenly as they baked! I doubled the recipe, which I'm glad I did; I used a 13x9" pan and added 1/4 tsp. maple flavor along with using "real" maple syrup. They are rich and delicious without being too sweet. I wish I had a scoop of ice cream to put on top of them. This will most likely be what I'm bringing for Thanksgiving.. :)

Mexican Corn on the Cob (Elote)

YUMMY! This was the first time I grilled corn straight on the rack without foil or in the husk; it was really good this way. We enjoyed the flavors even though I used parmesan in place of the cotija cheese. I will have to look for it in the stores next time I make it. My butter had some garlic from making garlic bread and I sprinkled a little chili powder as well as salt & pepper.

Garlic Asparagus with Lime

This was delicious! Served with my shrimp scampi tonight; I forgot the shallot at the store so I skipped it. My only suggestion is to cook the asaragus and garlic on lower heat for 10 minutes so you don't get burnt garlic which is bitter.

Bodacious Broccoli Salad

I had to make several changes, was 5 stars with them! (sorry to the ratings police).. :) I've used a recipe from this site for "broccoli salad" before but this apparently wasn't what I was remembering and I couldn't find that one, that's ok... I simply took out the cheese and added 3 stalks diced celery and sunflower seeds. I upped the sugar so it wouldn't be so tart/tangy; I like about equal parts sweet/sour. I'm not sure why it even needs the lemon juice but I did add it. I thought 2 tsp. of pepper was way too much so I sprinkled what looked like a good amount, (maybe 1/2 tsp). It's better after it sits a few hours. Good stuff!

Rocky Road

Lol.. someone wrote this was a disgusting cake! Not a cake but Rocky Road is a "chocolate mashmallow coated candy"... I really wish I had graham crackers so I can make it like cookie bars but I will try that next time; Just a super easy treat when you are craving something sweet! I added some chopped nuts. Thx.

Crispy Chicken Parmesan

This was really easy and really good! I didn't have mozzarella so I used slices of provolone on top; I also sprinkled some grated parmesan cheese in the bread crumbs since I didn't have 4 cheese croutons. I've made this before but first time in the oven, I liked how easy and I didn't have to clean up a greasy mess from frying the chicken first.

Garlic Chicken Stir Fry

I had high hopes but it was just ok... It was edible because of the veggies and chicken but the flavor of the sauce was so bland... I don't think I used enough garlic because I went with the jar stuff. Oh well!

My family loves this soup; after having it at The Olive Garden years ago I was excited to find it and make it at home. I skipped the bacon this time trying to make it healthier and I'm thinking about trying turkey sausage next time.. Really great!

Veracruz-Style Red Snapper

Tasy and low-cal!.. I made this tonight after first seeing the video on U-Tube... I didn't realize it was for only 2 servings which explains why my sauce wasn't quite enough but the flavors made up for that! The addition I made from another recipe was to pre-sliced then boil a couple red potatoes in salted water then layer them on top of the fish before putting the top layer of sauce. Other changes I made were leaving the fish whole, using dried oregano and red onion because of what I had. My three guys all liked it and the pickiest never said anything about the onions. I didn't have capers but I'll be sure to have them next time. I used some of the olive brine as a substitute. The snapper's flavor wasn't great on it's own; I would want to try it with other white-fish, maybe cod... Thank you!

Sun-dried Tomatoes I

So easy and it was kind of fun to make. I'm not sure if my family will except these funny looking tomatoes but if not I guess I'll eat them myself! I added salt & pepper and Herbs DeProvence; I upped my temp to 225 to help dry faster. I probably should have left them in longer, I only had them in for 5 1/2 hours. They looked done to me but after looking at some others pics I can tell mine had a little plumpness still to them. I let them cool and then put in a jar with some garlic slices, basil and Olive Oil. Placed in the refrigerator. TY

Broccoli Salad

This is a much healthier recipe than the "all mayo" version with bacon we usually eat. I like my broccoli crisp so I didn't blanch like some people recommended; I even added some diced celery for more crunch. I didn't have sunflower seeds so I used salted cashews; I also skipped the OJ since I didn't have that but I added a splash of apple cider vinegar and pinch of sugar to the dressing which is similair to the version I usually make.

Scalloped Potatoes "To Die For"

This is the perfect comfort food. My Mom made scalloped potatoes when I was a kid and these take me back... I think the seasonings and cheese in this recipe make them tastier and the short-cuts a lot easier than hers though. Love them!

Hawaiian Ranch Chicken Pizza

I bought one of those pizza's with the BBQ at the bottom and it was just too sicky sweet for me! I believe "this"combination of just drizzled BBQ sauce is the best! After trying a "specialty" pizza from a restaurant I tried to re-create it and I believe it's pretty close. Of course I don't have a special pizza oven but I still think this comes out pretty good; I'm hoping to buy a pizza stone, I hear they're good but the idea of putting it in the oven at 500 degrees for an hour before I used it is not such a welcome thought right now while its summer... :)

Onion Cheese Cornbread

I had tried a recipe like this one years ago and really liked it. I hadn't realized until following the directions that this had a "topping" which was different than my old recipe. I have a picky family and one family member who doesn't like sour cream or onions so I hid them inside. I only had a cup sour cream so I added about 1/2 cup cream cheese... I know huh! My picture will not accuratley portray what this recipe should look like because I used yellow cornbread mix and yellow regular corn, not creamed, I did sprinkle more cheese the last 5 minutes. ~ Loved it! :)

Snickerdoodles V

Excellent cookie! I used 1/2 shortening and half butter. I think that may be why they spread more than I had remembered. Taste was great though! I decreased sugar by 1/4 cup. These have always been a favorite cookie in my house! :) Method I used was dark cookie sheet that I forgot to spray, but they didn't stick; I baked at 365 for 8 1/2 minutes. In reply to comment about vanilla, they don't need it because they have a cinnamon flavor! :)
