Hi I'm Traci... I started baking at an early age; it was fun making goodies for my brother and I. Now I like to cook and bake for my two grown boys and husband. Everyone has a sweet tooth so baked goodies don't last very long in our house! We also love seafood and I like to make "Seafood Cioppino" for a birthday or special occasion.

"Seafood Cioppino", for desserts we all love cheesecake! I've made "Chantals New York Cheesecake" and "Fudge Truffle" cheesecake from this site! They are both awesome! :)

Spiderweb Brownies
YUM!.. I had a box of "Gir-- Brownie mix which already had chips in it so I skipped the Butterfingers. That would be a great addition for kids but we are all adults and I didn't want them too sweet; my big guys enjoyed the spider web! :) I made this to play up Halloween this month. I used an 9" pan but wasn't able to get as many circles as I needed to use up all of the cream cheese, I would use a 10-inch pan next time. I followed the box's instructions which were "bake at 325 for 50 minutes" It baked perfect and the cream cheese didn't brown too much at the lower temp.

Old Time Soft Sugar Cookies
I have my dough chilling right now, I was out of butter so searched for a recipe using shortening; many reviewers added butter and gave it 5 stars. I have also been guilty for altering recipes so I won't act as the review police! lol but I do know that would affect the outcome much... Here are my substitutions: 3tsp baking powder for baking soda, sour cream blended w/milk for butter-milk and upped the vanilla by a tsp. to hide the extra baking powder taste. Hoping for the best here because I wanted some sugar cookies today! My plan is to add a powder sugar glaze; I have both maple and lemon extract so I may do both since I doubled this recipe... :)

Chef John's Pineapple Upside-Down Cake
Wow! This is my favorite recipe for "Pineapple Upside-down Cake"... I'm surprised at some of the low reviews or those that said dry. I admit I used canned and maybe that's where the extra moisture came from but I'm wondering if some with problems with this recipe were from pineapple that wasn't ripe/juicy enough. I haven't had the "rum" since I don't usually have alcohol on hand but I've used rum extract (1/2 tsp) along with enough pineapple juice to equal a tablespoon... The brown butter flavor is what really sets this off along with the cardommon... I'm an experienced baker who know's what she likes so I used maraschino cherries in mine as well.. :) Thanks Chef John!
