Easy Cajun Jambalaya

Husband and I loved it. I did add half a can of drained, diced tomatoes and some leftover crab meat I had, but other than those additions I followed the recipe perfectly. Great flavor, will def be keeping in my recipe book!

White Chocolate Raspberry Cheesecake

This was amazing!! My 1st time making a cheesecake and I followed one of the comments about covering the bottom with foil and doing the water bath then letting the cheesecake sit in the oven for an hour after the oven was turned off. I had no problems at all, will be making again. Start early! I started at 11 pm and by the time I could put the cake in the fridge it was close to 2 am! About 1 hour prep, then 1 hour in the oven, then 1 hour sitting so it was a 3 hour process from start to finish being when I could put the cooled cheesecake in the fridge and go to bed! it looked gorgeous too!!

Spinach Quiche

I made this last Saturday and it was great! The only things I changed was I used a package of fresh mushrooms and half of a red bell pepper chopped to give it some more color. I also couldn't find a deep dish pie crust so I used 2 normal size crusts and they filled up perfectly. Not sure how all the filling would've fit in one pie crust. Very good, will def. make again!!

Roasted Garlic

I set the temp of the oven at 375 degrees and I usually wrap the garlic in foil, cut off the top and drizzle with olive oil and sprinkle with salt and pepper. I loosely cover the garlic with the foil and bake for a good hour. That gets it very soft like butter and so good!

Fideo (Mexican Spaghetti)

I have also been making fideo for years. My recipe is a little different though-I don't use regular noodles I use 1 box of vermicceli, it also says Fideo on it in the pasta isle (yelloe box w/ red lettering) and 1 can of diced tomatos with green onions seasoned in them. 1/2 cup of chicken stock or i can of water. I usually make this w/o any chicken or meat if I'm looking for a fast meal. Just melt 3 tbls butter in skillet and then add fideo stirring constantly until light browned.Then pour in 1 can of diced tomatoes and 2 cans of water or the chicken stock, bring to a boil and then cover and simmer for 10-15 min until fideo noodles are al dente. I then add more chicken stock if it seems to thick for me and then I add grated cheddar cheese and eat with a warm flour tortilla. I season as needed w/ salt and pepper, maybe some cumin. very easy meal to make.

Baked Ziti I

I've made this recipe a few times now and it's just great! It has all the gooey cheese and sauce just oozing from the every bite. I followed it to a 'T'. And it does make a lot! I had to use a smaller baking dish to put the rest that didn't fit in my casserole dish. Will def. make again and again!

Oyster and Cornbread Dressing

It was very good for oyster dressing, but I don't think oyster dressing is something I care for, I wanted to try this recipe though and would recommend if you love the oyster flavor to give this one a try.

Cajun Corn and Crab Bisque

I thought this might be difficult when I read it called for a roux but it turned out quite simple and fast! the taste was excellent, I followed the recipe exact but instead of a full lb of crab I used half crab and half crawfish tails-rinsed throughly before adding them to bisque. The taste is one I have tasted in a favorite restuarant in Lafayette, LA. I will definitley be making again! Thanks for a great recipe!

Quiche Supreme

It was wonderful! I used Jimmy Dean breakfast sausage instead of ham and just cooked it with the onions and other stuff. It was easy to follow and the amount of eggs was just perfect. The quiche was nice and thick and very hearty. This is my new quiche recipe for life! My family loved it.
