Mom's Cheesecake

I've made all kinds of cheesecakes over the years and this is absolutely the best ever!! It had a perfect balance of creaminess and density. Following suggestions from others, I increased the melted margarine to 1/2 cup, but next time I'd stick to what is called for or just slightly more.

No Bake Chocolate Oat Bars

EXCELLENT! Very yummy, easy to make, easy clean up. These bars taste great out of the fridge. I cut the butter in half and used 1/4 cup of light sour cream to replace butter. Came out perfect! Great PB, chocolate taste

Angie's Dad's Best Cabbage Coleslaw

This was very tasty and a nice change from the usual mayo based version. I made half a recipe in case it didn't go over well, but it disappeared in 2 days! I will definitely make this one again soon.

Grilled Shrimp Scampi

I've made this recipe a couple of times using very large sea scallops instead of shrimp. The result was absolutely delicious! They turned out well when seared in a grill pan on the stove top also. This recipe is definitely a "keeper" for me!

Coconut Curried Tofu with Green Beans and Coconut Rice

Very good! Both my daughter and I enjoyed this dish. I added cilantro to give it a little more zip. The green beans worked well...which surprised me! Next time I will probably play around a little and add some different vegies, maybe some pine nuts or even a few raisins.

Seven Layer Tortilla Pie

Loved this!! I followed the recipe exactly and it turned out great. I used a slotted spoon when scooping the black bean tomato mixture, as that was quite watery. The "stack" held up perfectly and after baking and I was able to serve it in pie-like wedges. Next time I might replace one of the pinto bean layers with a mixture of crumbled Boca and maybe some black olives. This recipe will lend itself to some creativity.

White Chocolate Raspberry Cheesecake

Absolutely amazing! I'd give it more stars if I could. This was not difficult to make and got rave reviews from everyone. I happened to make it twice within a week and there was enough of the raspberry sauce left from the first time to make the second cake. The sauce adds a nice bit of tart contrast to the richness of the white chocolate and cream cheese.

Tangy Cranberry Sauce

I was looking to match a Cranberry Horseradish Jam that was made by Stonewall Kitchens (it seems to have been discontinued). This comes pretty close but is more of a relish than a jam.

Vegan Brownies

YUM! I made these for my vegan friend, and, of course, tried a couple. They are SO good, a fellow taste tester (non vegan) said, " these are the best brownies I've ever had". They are very gooey, so I might bake a few minutes longer. One piece of advice, don't stack these brownies! I made that mistake and the tops of the bottom layer stuck to the top layer. All in all a great vegan option. The only change I made was replaced the 1 cup oil with 1/2 cup oil 1/2 cup applesauce.

Peach Curry Glazed Pork Chops

This was absolutely delicious! I used 3 fresh peaches instead of canned so I made a syrup of water, sugar and a little maple syrup to make up for what would have been in canned peaches - as suggested by someone else.

Winter Lentil Vegetable Soup

We loved this soup!! Even my husband, who didn't think he'd like it because it looked so "tomato-y." I had some fresh tomatoes on hand that needed to be used up so I used those and a small can of dices tomatoes.

Slow Cooker Italian Beef for Sandwiches

This made a great alternative to cold sandwiches. The meat was tender, very easy to shred, and tasty. It seemed a little plain on its own but topping it with coleslaw was delicious. Another day we melted shredded cheeses on top and that was great too. This is a recipe I'll definitely make when we have a crowd over. You can do it ahead of time and stick in the crockpot for reheating the next day.

Pollo (Chicken) Fricassee from Puerto Rico

This turned out great! I used skinless chicken thighs instead of drumsticks and browned them before putting them in the slow cooker. I doubled the amount of adobo seasoning and sazon as some had suggested and did not use any additional salt. It seemed like it would be a little watery so near the end of cooking I added a small can of tomato paste. The chicken was so tender it was falling off the bone. The potatoes were delicious (I'll put a couple more in next time). My husband really liked this - although if he'd seen what went into the sauce he would probably have refused to try it! I'll definitely be making this again.

Crustless Spinach Quiche

Yum! Just had this for dinner- you don't miss the crust at all. I added about 1 tsp of garlic salt to the mixture and it gave it a nice kick. Can't wait for breakfast to have it again :)

Jo Jo's Favorite Banana Muffins

This B-bread was amazing. I used three frozen bananas (thawed). the flavor and consistency of these muffins is perfect, a very strong banana flavor, moist and delicious! I also added 1/2 c. mini chocolate chips .:)

Lasagna Stuffed Shells

This Recipe was great! I didn't make any changes except I made up half of the sauce with the ground beef, and half of the sauce with vegetarian crumbles. My boyfriend and I both loved this recipe, it was very flavorful and filling. I will be making this again!

Dark Chocolate Brownies

Excellent, my Fiance' stated these are the best brownies I have made (and I make a lot of brownies!) I made them exactly as stated with the exception of adding some andies candies crumbled on top, yum! I did have to bake them about 5 minutes longer than stated ( at 325), but they came out chewy and rich! I have made these twice so far and am sure I will be making them again soon.
