Peachy Moist Muffins

I'm making these for the second time (currently baking in the oven). The first time they came out great with the couple of suggestions taken from previous reviews (which is why I can't give this five stars as written). I added an extra 1/2 tsp baking powder and added a little skim milk to thin out the batter. I also used closer to 2 cups of chopped peaches. They came out super moist and yummy, yet they were still missing something, so I added an almond glaze which just put them over the top. The batch that is in the oven now, I added 1 tsp cinnamon to the dry ingredients, which I expect will only enhance this recipe. A great way to use up some of the many peaches I have growing in my backyard!

Hugh's Dry Rub

This rub was a great complement to the barbecue chicken I made last night! I did cut back a bit on the cayenne (about 1/3 of the recipe's suggestion) as I didn't want it too overpowering.

Buttery Soft Pretzels

I had a little difficulty when working with the dough but I think that was more my fault because I used white whole wheat flour. I just ended up adding more water while kneading and it was more manageable. In the end these ended up tasting really good and are very filling. After baking the pretzels, I brushed them with melted butter and sprinkled half the batch with cinnamon sugar.

Cranberry Crumb Pie

Made this for Thanksgiving today and it was a big hit! I followed this recipe exactly but used a graham cracker crust (the larger size that has "two extra servings"). I didn't have any problem with spillage... it was actually quite perfect. I will definitely be making this again!

Pork Chops with Apples, Onions, and Sweet Potatoes

I wasn't such a fan of the onion in this recipe so I ended up just pushing the onion to the side. The rest of the tastes were great! I ended up cooking my pork chops in a 9 x 13 glass dish since I don't have any oven-safe pans. I put about 1/4 cup water in the dish, seasoned the chops with a little salt & pepper and placed them in the dish. Then in a bowl I put the onion, apple, and sweet potatoes (I used canned, drained) in a bowl and added the brown sugar and a little cinnamon. I then put the apple mixture over the chops and covered the dish with some foil and baked in a 375 oven for 45 minutes. The consistency of everything came out perfect! I would definitely make this again (minus the onion). Good meal for a rainy day or cool Fall evening.

Beefs Portuguese Style

Very tasty. Just made this for dinner tonight. I did have to make a couple of substitutions because I didn't have the exact ingredients (substituted red pepper flakes for the chile paste and used regular fresh ground black pepper instead of white pepper). It was very easy to make, also, which is always a big seller!

Breaded Chicken Fingers

This is the first time I've fried anything, and I must say, after a minor glitch in the beginning, it turned out very well. I made my own buttermilk with the directions from a previous reviewer (1 cup of milk with 1 tablespoon of lemon juice). I also added 1/2 teaspoon of black pepper and a few dashes of a seasoning mix to the flour mixture (I only had plain bread crumbs in the house at the time). I didn't have a thermometer to monitor the temperature of the oil (which led to my glitch in the beginning because the coating on the chicken cooked too quickly leaving the middle of the strips pink). My suggestion to anyone who may have had or will have the same problem is to start heating the oil over high heat then switch to medium to medium-high heat to cook the chicken in. I also made the honey mustard II to go along with it.... mmmm! Very good dinner! :) Looking forward to the leftovers!

The Best Banana Pudding

Super easy to make! I didn't use the condensed milk because it was plenty sweet just from the vanilla pudding and whipped topping. Very good and easy! I'm bringing some to a cookout today. :)

Chicken Marsala

Just made this for dinner tonight and it was fantastic! I made a few of my own adjustments. First, I took the advice of a previous reviewer and put the flour mixture in a large ziplock bag to cut down on mess. I also added some garlic to the oil/butter mix after cooking the chicken for a few minutes. I used 1 cup of wine and no sherry. And I also added a little bit of flour to the sauce to thicken it up. Yummy!
