Sassy Spaghetti

I was so excited to find a spaghetti recipe that didn't include a great deal of cheese or tomato product, however, this one was not quite right. I added lean ground beef and the bean/corn/beef mixture tasted great. The problems occured when adding it to the spaghetti - the dish was just too dry. My daughter cut hers up and added extra olive oil and said that was better. I may play around with this one and see what I can some up with without adding a bunch of cheese or sauce, but as it is written it was just to dry for my family and it was difficult to get a bite of the mixture and the spaghetti together.

De's Version of World's Best Lasagne (Hint - it includes wine!)

I have made this three times now to RAVE reviews! Omit the Salt (I forgot once and it was way too salty!), definitely add a red wine (as suggested by another reviewer), double the spices and add another can of tomato sauce and an extra cup of water. Add nutmeg (also as suggested by another reviewer) to the Ricotta and definitely use the suggested noodles in hot tap water trick. Thank you everyone for your tips on this one, they are all great!! Oh, and I also simmer my sauce for at least three hours, the longer the simmer, the better the flavor!

Chuck's Favorite Mac and Cheese

It was pretty good. Very rich and creamy. My kids suggested more cheddar, less crumb topping next time. I've had better, but this one is pretty good. I am thinking next time I'll add some milk and maybe a creamier cheese and I'll cut the crumbs by half, maybe more. I did use lower fat and calorie sour cream & cottage cheese. Next time I may also use a whole wheat pasta and a lower fat cheese in place of the cheddar, it was almost too rich!

World's Best Lasagna

Cranberry Martini

I have served these at two parties now to rave reviews. So refreshing! The only danger is it is easy to have too many! I would suggest playing with the amounts a few times before serving to guests. My first few were way to strong and the flavor was bitter, we ended up cutting the liquor almost in half and it was much better. We also made these in small pitchers so everyone could self-serve and it worked well.

Fruit Salsa with Cinnamon Tortilla Chips

My children think this is the best treat ever! We make it for all the lake weekends in the summer. I make my version with Splenda and bake the chips to lower the calories. Yummy!
