Sweet Corn Cake

I came accross this recipe when I was looking for a side dish for a mexican meal. I have always been a firm believer in the theory that every meal should have a protein, a vegetable and a starch, but try doing that with a Mexican-themed party! This recipe was perfect but I found that here in the South, they call this dish corn puddin'. That's right, no G! I double the recipe and bake it in a 13X9 pan. It is fantastic! I make it every time I attend a Mexican-themed party and it is always a huge hit! I get plenty of requests for the recipe.

Judy's Strawberry Pretzel Salad

Really good! I have heard of this "salad" before but have never made it. I made it for a get-together with friends and no one had ever heard of it before but they loved it! It quickly disappeared!

Cheddar Bay Biscuits

King Ranch Chicken Casserole III

I just moved to the South and this recipe is very popular here but it is called by the brand name of the tomato and chile mix. I grilled the chicken breasts to add an extra layer of flavor. I didn't shred them or chop them up but I left them in large chunks. I also left some of the chips whole and used them to line the sides of the pan to make it prettier!

Fresh Rhubarb Pie

My mother-in-law has a gluten allergy and this is the only time she will eat anything containing flour! She says it is worth the inevitable reaction. We have an orange tree in the backyard and Sometimes I will add some grated orange peel and a smal amount of the orange juice for a different twist!

Beef Stroganoff III

The flavor was fantastic! However, I had some issues with the flour-- it turned out lumpy and I had to perform some "kitchen magic" to make it work. I will try the recipe again but I will use a cornstarch slurry instead. Plus, I used fresh sliced mushrooms; I just added them to the pan while sauteeing the onions.

Brownie Cups

Be VERY careful to fill the cups a very SCANT halfway full. If you fill the cups up too much, you will have a disaster on your hands!

Simply Parmesan Chicken

Good recipe. However, I recommend pounding the chicken thinly and serving over a bed of baby greens tossed in caesar dressing. Hmmm.... that sounds good! Maybe I should post that as a new recipe!

Seven Layer Taco Dip

I left out the olives (because I hate them!) and the tomatoes (because my friends hate them!) and the recipe turned out great! I did substitute guacamole before the lettuce to keep the "seven" layers!

Apple Crisp II

The additional water is completely unnecessary! The finished product was beautiful but when we served it, it was a bit watery! Next time, I will let the natural juice stand on its own. The "crisp" is yummy though!
