Mom's Zucchini Bread

Reviewed: Jul. 29, 2012
I made a double batch because I had a LOT of zucchini to use up. The recipe was good but I could have added twice as much zucchini to really see it and taste it!

Made this over the weekend... was pretty good but I added liquid smoke and that made it much better!

Buttery Corn Bread

Reviewed: Nov. 16, 2010
Yum! My Southern friends don't use sugar in their cornbread but this recipe is the "Northern" style cornbread I remember!

Made this for Easter dinner and got rave reviews! Next time I back down the salt... the cheese is salty enough!!

It was great... I doubled the recipe and served for a baby shower brunch. The serving dish was wiped clean!

I made these for a bake sale at work and so many people were thrilled with a vegan option. They were a huge success.

Yellow Squash Casserole

Reviewed: Sep. 1, 2007
Good texture but not enough flavor. I added some fresh garlic and additional salt and pepper and it was perfect!

Apple Crisp II

Reviewed: Aug. 26, 2007
The additional water is completely unnecessary! The finished product was beautiful but when we served it, it was a bit watery! Next time, I will let the natural juice stand on its own. The "crisp" is yummy though!

Seven Layer Taco Dip

Reviewed: Jul. 16, 2007
I left out the olives (because I hate them!) and the tomatoes (because my friends hate them!) and the recipe turned out great! I did substitute guacamole before the lettuce to keep the "seven" layers!

I made this for a party but didn't have vegetable soup mix so I used onion. I should have DOUBLED the recipe because everyone LOVED it!

Simply Parmesan Chicken

Reviewed: Jun. 23, 2007
Good recipe. However, I recommend pounding the chicken thinly and serving over a bed of baby greens tossed in caesar dressing. Hmmm.... that sounds good! Maybe I should post that as a new recipe!

Brownie Cups

Be VERY careful to fill the cups a very SCANT halfway full. If you fill the cups up too much, you will have a disaster on your hands!

Beef Stroganoff III

Reviewed: Jun. 23, 2007
The flavor was fantastic! However, I had some issues with the flour-- it turned out lumpy and I had to perform some "kitchen magic" to make it work. I will try the recipe again but I will use a cornstarch slurry instead. Plus, I used fresh sliced mushrooms; I just added them to the pan while sauteeing the onions.
