Basil Chicken Strips

What a champion chicken recipe! We made this in a flash and although you might be skeptical about putting vinegar on your chicken, it has a great taste. Ours was not dry, but if you overcook your chicken it may turn out that way for you. Followed recipe exactly.

Greek Green Beans

I'm not a big fan of green beans, but I loved these! Used canned beans, a can of tomatoes w/onion & garlic + 2 small onions and garlic. Omitted the salt. Delish!

Chicken Breasts with Herb Basting Sauce

Very good, will probably make it again. Also very easy. It was nice to make something that I had everything on hand for. If you have big pieces of chicken like I did, you will need a pan larger than a 9x13. I took the foil off for the last 6 minutes and you will need it off longer if you are wanting the skin to be crispy. The chicken was very juicy (used the bone-in split chicken breasts).

Chicken Soup III

So I know exactly what to do next time: Cook egg noodles in the pot, rinse, put away till you need them. In same soup pot,cook approx 8 chicken thighs (after removing skin) in water - bring to a boil, simmer for 25 minutes or so. Remove them, cool them, pick meat off. Put pot w/broth in fridge, wait for fat to rise to the top, then remove. Return pot to stove, add chopped carrots, celery and onions, bay leaf, celery seed, pepper, 3 bouillon cubes, marjoram, parsley, & a little bit of thyme. Bring this to a boil. Reduce heat and add chicken and noodles - let this simmer for a good 2 or 3 hours. Remove bay leaf and enjoy! Soooooo good!

Pumpkin Pie Cake II

This recipe used twice the amt of pumpkin than a similar recipe my mom has and I really like the thicker pumpkin layer. Yum! I made it in 2 8x8 pans, giving one away and keeping one for here at home. I probably should have taken it out at 50 min, but let it in 5 min more, but it is still great.

Quick Cherry Turnovers

So easy, fast, and a great way to use up some leftover cherry pie filling. The only thing I had trouble with was that I did not seal the seams on the crescent rolls well enough, so a little liquid seeped out, but they were still a big hit.

Lemon Asparagus Pasta

Easy to make, I thought it was okay but I am only giving it 3 stars because the rest of my family was not thrilled by this. Pretty healthy tasting dish but not for lemon-hating five year olds!

Loved this, made the chicken ahead of time to save time. Used bowtie pasta. The oldest child protested upon seeing it, tasted it and ended up asking for seconds. Success!

Bandito Beans

This was NOT a hit at our house. Definitely wish I would have left out the fennel seed. Make sure to leave it out if you do not like black licorice. I think a dish with a lot of these same ingredients could be really good, but not this exact recipe. I ate it, but it definitely was not "love at first bite" which is what I was hoping for.

Sweet Potato Pineapple Casserole

This was easy to make and my family did eat it, but personally I think the sweet potatoes with the brown sugar sauce and marshmallows on top is way way better. So if you like that a lot, you might be a little disappointed with this. I thought this needed a little more of something, not sure what.

Berries 'N' Cream Brownies

Such an easy way to dress up brownies. Brought these to a small party and even showed up late and the entire pan was still demolished. I did not put the hardshell chocolate on top b/c I did not have any but it was still really yummy and pretty. Will use this one again!

Spicy Potato Wedges

Used olive oil instead of vegetable oil and after microwaving these put them in the oven at 425 for 10 or 15 min to get them crispy. This really cut down on the bake time, which I liked. I will do this more often! Used my own blend of seasonings = Mrs. Dash on these, so good!
